How many times have I heard guests complaining about dish prices.
But complaining is so much easier than, at least, trying to understand.
When you order a dish, or a drink, there are literally dozens of hidden costs a restaurant has to cover.
Did you know that in average 70 to 75% of your bill is only to cover Food costs, Beverage costs & the Staff you see when seating down in a venue.
Of course, another 10% goes directly back to pay GST …
So you must be thinking, oh, great, restaurant goes away with 15% profit !
Haha. If only!
In Overheads you will often find:
- Insurances (Public liability, management liability, equipment replacement, theft, extreme weather, vehicles, cyber protection …)
- Licences: food, alcohol, music
- Rent or Mortgage
- Business Loan ?
- Ordering System: point of Sale system - IPads, printers, consumables > Paper Rolls
- Electricity, Gas.
- Storage
- Phone & Internet > Computers
- Office Supplies
- Equipment replacement: glasses, cutlery, napkins, tablecloth, crockery, tables, chairs,
- Chemicals: rinse aid, bleach, divers sanitizers, consumable like gloves, soaps, hand towels, toilet paper roll…
- Pest Control
- Bank Fees
- Accountant Fees
- Lawyer/contract fees
- Vehicle, fuel, maintenance, registration
- Website, ASIC registration, Domains
- Marketing & advertising
- Large equipment purchase and maintenance. Ovens, dishwasher, deep fryers, planchas, fridges, freezers and their maintenance (very high in QLD conditions).
- Containers, bags, single use cutlery for take always.
This is obviously not only in hospitality, but we only talk about what we know, so hospitality is our example. And other industry professionals would be the only people with enough credibility to comment their own experiences.
When you decide to dine out, you decide to use a cost heavy industry. And yes, it comes at a certain price.
