Very grateful and thrilled about this recognition. Delighted. Thank you 🤩

We love Adelaide Hills W**e Region chardonnay, and the MT process for sparkling w**e, but most importantly we love that the w**e is being enjoyed!
A small part of this w**e began in 2012, when we set aside our entire BdB production as reserve w**e in magnum for future sparklings. The rest commenced in early 2023. And then we had to wait out that period of time on lees.
Anyway. Woo hoo! Cheers ✨

We know our place pretty intimately ..
every row, slope and tree in the vyd, as well as bushland, open paddocks, dam and gardens.
But recently our multi-talented friend Emile Kobayashi gave us the chance to view Honey Moon Vineyard from a different perspective.
More airy & spacious, yet anchored in the landscape of the high ridges of Echunga. ✨Magical.

The HMV Classic Tawny is our interpretation of an Australian classic, using pinot noir & cool-climate shiraz.

It is a blend (solera) of small batches of w**es made in most years, commencing in 2009.

We waited until the average age of the w**e had reached around 10 years before releasing it, a few years ago now.

W**es like these take a long time to evolve and a lot of attention along the way.

Here we are doing our periodic review of the components we have in the cellar, and replenishing the bottling barrel.

Each bottle is a barrel sample from our “library” of components. Pale gold = younger pinot; deeper colours are typically shiraz; amber & tawny hues are the most mature components.

Some are still too young for the bottling blend, but we like to keep an eye on all of them, tasting our way through the cellar every six months or so.

It’s a very different pathway to send Adelaide Hills W**e Region pinot & shiraz down … but the result is so worth the effort: a beautiful tawny-amber w**e that is definitely sweet & luscious, but above all elegant, complex and refreshing.

And versatile - goes well with 🧀, dark 🍫, roast nuts & umami-flavoured dishes. 😋

The last thing we do before a bottle of our w**e leaves us …
to become a glass of w**e in someone’s hand,
…an intriguing aroma, a delicious taste, a relaxing w**e adventure
… a bottle being shared amidst the hum of conversation…

We polish bottles, write labels & notes, wrap with compostable tissues, and send off with our good wishes.

Almost a rap about wrapping. 😵‍💫🤪🙄

It’s been a typical couple of weeks for an Adelaide Hills w**e producer
… getting reds off to bottling,
… getting “on the tools” (ha - our cellar craft is a bit messy) topping w**es in the cellar,
…trying to get pruning done - a race against bud- burst 💥 (those little leaves emerging from plumped up buds)… which the pinot won
…not helped by a shoulder injury
…so thank goodness for a terrific pruning crew finishing off.
Such great outcomes
- lovely cool climate shiraz and pinot noir in the bottle
- barrels all topped up and happy
- vineyard ready to get going with its next cycle of production.
First slide has little “icebergs” of CO2 giving off gas to protect the w**e.

Alongside our w**es, we have started serving some superb local mineral waters.
Refreshing, distinctive and with their own sense of place.
We’re delighted to include Carribie Mineral Water and A Rock And A Hard Place in the rhythm of our tastings.

Also, we’ve been “bringing out the good glassware” - our expanding collection of vintage hand-cut crystal - for water and for our Sweet Cream Apera and Classic Tawny.
Why?
The heavy weight but also fine rim of these glasses feels great, they accentuate the jewel-like colours of the fortifieds, and the crystal catches the light in sparkles and (sometimes) 🌈.

Made with great skill mid last century - and treasured as gifts and beautiful objects - now having a new life as lovely glassware to be enjoyed at our tastings.

A little more sparkle, refreshment, rainbows and twinkles. 🌟🦄✨💜

We don’t do many tastings in our private tasting room, but when we do, we delight in sharing our w**es with our guests, and in creating a sense of occasion around them. 🍇🥾💃🏼🕺🏻🪩🥂✨🌈🦄🌀🌟

Final tastings of our 2025 pinot and 2025 shiraz w**es before bottling.
A stellar vintage for us. 🌟
Made us think of our first reds - 2007 - still drinking with vitality & deliciousness today.
Bottling is essentially the last w**emaking step in a long chain of events that started with flowering in the vineyard in late November 2024. Looking forward to that first sip in a few months time (after some quiet time in the cellar)! 🍇🥾💃🏼🕺🏻

Slashing the vineyard was going just fine until we encountered a bundle of baling tw**e. Arrgghh too late! Within milliseconds it had wound itself around the blades of the slasher.
There is a lot about growing 🍇 and w**emaking that looks nothing like the w**e in the glass (like untangling tw**e from underneath a 🚜).
A small dram of Classic Tawny with afternoon tea tasted extra good afterwards. 😋 **e

Winter Reds at Honey Moon this year. Good food, good w**e, and wonderful guests.
For us, growing grapes and making w**e is ultimately about the moment the bottle is opened and shared. Bringing people together to enjoy good food, good company and create lasting memories.
So it was such a pleasure to host these tastings.
Heartfelt thanks to the local businesses whose delicious food and elegant mineral waters helped make the experience so special.

And to our wonderful guests - we very much enjoyed your company.
