Alongside our wines, we have started serving some superb local mineral waters.
Refreshing, distinctive and with their own sense of place.
We’re delighted to include Carribie Mineral Water and A Rock And A Hard Place in the rhythm of our tastings.

Also, we’ve been “bringing out the good glassware” - our expanding collection of vintage hand-cut crystal - for water and for our Sweet Cream Apera and Classic Tawny.
Why?
The heavy weight but also fine rim of these glasses feels great, they accentuate the jewel-like colours of the fortifieds, and the crystal catches the light in sparkles and (sometimes) 🌈.

Made with great skill mid last century - and treasured as gifts and beautiful objects - now having a new life as lovely glassware to be enjoyed at our tastings.

A little more sparkle, refreshment, rainbows and twinkles. 🌟🦄✨💜

We don’t do many tastings in our private tasting room, but when we do, we delight in sharing our wines with our guests, and in creating a sense of occasion around them. 🍇🥾💃🏼🕺🏻🪩🥂✨🌈🦄🌀🌟

Final tastings of our 2025 pinot and 2025 shiraz wines before bottling.
A stellar vintage for us. 🌟
Made us think of our first reds - 2007 - still drinking with vitality & deliciousness today.
Bottling is essentially the last winemaking step in a long chain of events that started with flowering in the vineyard in late November 2024. Looking forward to that first sip in a few months time (after some quiet time in the cellar)! 🍇🥾💃🏼🕺🏻
We are very excited. 🪩🍷

Slashing the vineyard was going just fine until we encountered a bundle of baling twine. Arrgghh too late! Within milliseconds it had wound itself around the blades of the slasher.
There is a lot about growing 🍇 and winemaking that looks nothing like the wine in the glass (like untangling twine from underneath a 🚜).
A small dram of Classic Tawny with afternoon tea tasted extra good afterwards. 😋

Winter Reds at Honey Moon this year. Good food, good wine, and wonderful guests.
For us, growing grapes and making wine is ultimately about the moment the bottle is opened and shared. Bringing people together to enjoy good food, good company and create lasting memories.
So it was such a pleasure to host these tastings.
Heartfelt thanks to the local businesses whose delicious food and elegant mineral waters helped make the experience so special.

And to our wonderful guests - we very much enjoyed your company.

There’s so much to do to get ready for events like Winter Reds tastings - happening this weekend… 😅 we know what wines we want to share…catering… glassware, including some vintage gems💎 .,, tables & 🪑… firewood 🪵… all sorted, but all I have on 📷 is the rescue of a favourite garden ornament from rampant ivy. Huzzah. ⚡️
But back to proper work now.
Wishing us all an abundance of energy and smooth sailing ⛵️ this week.

Winter. Ideal conditions for hibernation. The vines worked that out a very long time ago … cooling their jets and accumulating what they will need for springtime and beyond. Sometimes I envy their lifecycle🤔. But on the other hand I definitely appreciate warmth, shelter and doing. 🍇🥾💃🕺🪩🍷

A few months ago, wrote some extraordinarily generous words about our Sweet Cream Apera for . His comments blew us away and we are finally getting around to sharing them.

While this wine began with our 2018 harvest of very ripe grüner veltliner, its story actually reaches back much further.

When Hylton studied winemaking in the ‘70s, fortified wines were a significant part of Australian wine, and winemakers were taught how to make the full range of fortified styles.

Fast forward to 2018, with beautiful grüner veltliner from the Anderson Vineyard at Charleston, plus Hylton’s know-how, and our creativity, we set out to re-imagine the cream sherries of the ‘70s.

But in the HMV style: cool climate, freshness, texture and detail.

Hand harvested, matured in old fortified barrels & bottled from barrel on demand, this wine offers something close to a “fresh from the barrel” experience.

Every bottle is filled, labeled & finished by hand by Hylton, including the small golden seal of wax on the cork. The beautiful label by brings it all together.

Over recent months the wine has found its way onto a number of memorable tables during , including our dinners with .adl

96 points. Halliday Wine Companion. Mike Bennie.

Wishing us all many moments of decadence over the winter month’s ahead. 🍇🥾💃🕺🪩🍾🍷

The Adelaide Hills Winter Reds program is now officially launched. Woo hoo!

There are more than 45 events taking place across the region this year, celebrating cool climate wines with winter hospitality, toasty fires, long lunches, special dinners, interesting tastings, dancing … all the pleasures of gathering together in the heart of winter.

As is our way, our events are small & intimate tastings hosted by us in our private tasting room, seated around our vintage dining tables. There’ll be generous winter grazing and wines poured from across our range of méthode traditionnelle sparklings, table wines and niche sweet wines, with a focus on our pinot and shiraz.

We will also be opening a few gems 💎 from the cellar as we mark our twentieth vintage working with our vines.

A wonderful antidote to the trials of winter ❄️ Come and join us.
