Beginner Tip: How to Pipe Perfect Shell Borders

If you’ve ever wanted that classic, pretty border you see on vintage cakes, shell piping is the perfect place to start. It’s one of the easiest techniques to learn — and once you get the pressure‑and‑release motion right, it becomes so relaxing.

Here’s the simple method:

1. Hold your piping bag at a 45° angle
This gives the shell its little “tail”.

2. Squeeze → pull forward → stop
That’s the whole technique!
Squeeze to create the base, gently pull forward, then stop squeezing before lifting away.

3. Overlap each shell
Pipe the next shell so it sits neatly over the tail of the last one. This hides any imperfections and makes the border look seamless.

4. Keep your buttercream on the stiffer side
Soft buttercream = flat shells.
Stiff buttercream = clean, defined ridges.

💡 Tip: Use leftover chocolate and simple moulds to create your own Easter shapes.

“Why your fondant sweats in humid weather”

Ever noticed your fondant going shiny or sticky after you cover a cake?
That’s not you doing anything wrong — it’s just the weather having its say.

When the air is humid (hello, Perth summers!), fondant naturally pulls moisture from the air. That moisture sits on the surface and creates that “sweaty” look.

A quick fix:
Let the cake sit at room temperature and allow the moisture to evaporate on its own. Don’t wipe it — that can make it worse. A small fan nearby helps the surface dry faster without changing the texture.

A little tip for next time:
If you know it’s going to be a humid day, dusting your hands and tools with a tiny bit of cornflour can help keep the surface smooth while you work.
