The Red Thread

Spring is the first stitch in the "Red Thread" of the 2026 vintage. It requires absolute integrity and fierce determination. We are not chasing trends; we are cultivating a legacy of patience.

As the days begin to outpace the nights, we invite those who value the thrill of discovery to witness the quiet awakening of the Estate.

On March 13, 1435, the first record of Riesling was written into a German cellar log.

Today our thoughts are on our own history – and a specific wine that did more than expected to help define it.

Earlier this month, we officially retired our inaugural Riesling to the Dobbin Archive.

This wine did more than just introduce our voice; it was the backbone of our formative years. It was the proof of concept that "precision and energy" weren't just words, but a standard we could meet. Time and again, it proved itself to wine lovers who care deeply about place. It deserves a toast today – not just for what it was, but for everything it allowed us to become.

One chapter is now preserved. The next is just beginning.

Steven Elphick was an award-winning, widely published photographer of rare distinction, with work exhibited at major Canadian institutions and honours reflecting the depth of his contribution to the wine world. For us, though, he was also the artist whose eye revealed Dobbin to us with fresh wonder.

It was always a pleasure to place Dobbin in Steven Elphick’s hands. We knew that when he arrived with his camera, he would see the property with both precision and feeling – not only its beauty, but its texture, shape, atmosphere, and character. He had a remarkable gift for drawing striking images from vineyards, buildings, objects, and light.

There was real delight in receiving the results of his work. We have been proud to see Steven’s photographs represent Dobbin in publications and across our own website and social media.

The selection shared here includes some rarely seen images, including the bridge image, which is from Steven’s final visit to Dobbin last fall.

We are grateful for the care, artistry, and understanding he brought to the estate, and we remember him with admiration and thanks.

Winter pruning is one of the most important activities we undertake all year.

Decisions made now set the stage for the growing season.

While carefully removing last season’s growth, we decide how many buds remain - and therefore how many shoots and clusters the vine will carry.

In this photo, our viticulturist, Ann Sperling, and the team were working in the Charlene Vineyard.

Open That Bottle Night is coming up this weekend – and consider this your friendly nudge.

Started in 1999 by wine writers Dorothy J. Gaiter and John Brecher, it’s an informal tradition celebrated on the last Saturday in February: open the bottle you’ve been saving for “the right moment.”

OTBN has one job: turn “someday” into tonight.

So reach into your cellar, pull that special bottle, and make a Dobbin-like toast: “To the story in the bottle – and the story at this table.”

Enjoy.

The Integrity Study.
Sharing an afternoon in the Tower with Members and their curiosity.

It started with a simple question: what happens when you keep tasting a young wine after it’s been opened? Our initial findings were compelling enough to build a study around it.

We called it an open-bottle evolution trial – a fast-forward glimpse at how a wine may unfold over time. The wine in the spotlight was our 2023 Estate Cabernet Franc, projected for release in 2027.

On Saturday, winemaker David Brennan recreated his discovery journey for two groups of engaged Members.

It was fascinating to taste with intention, tracking what time and oxygen reveal. Trial by Time, in the most literal sense.

Thanks to all our Members who shared their observations and opinions with us. We’re especially pleased you concurred: there’s a very exciting wine ahead, and until then, our 2020 Cabernet Blend makes a pretty compelling benchmark.
