C.M. fermented Columbia roasted by .coffee
But what does C.M. mean? Where does it come from and who came up with this crazy but delicious fermentation method in the coffee industry?👇🏼
C.M. means Carbonic Maceration and it comes from the wine industry. It’s a popular method when harvesting and processing wine grapes.
In 2015 won the WBC in Seattle using a coffee that was processed with this experimental method, which brought it to the spotlight. Before that this method had only been used in the wine industry.
After the coffee cherries were picked, they are placed in an airtight stainless steel container, where CO2 ( carbon-dioxide ) gets pumped. CO2 allows the coffee cherries to break down to different levels of pectins (soluble fibers found in most plants, also in food, most commonly used to thicken jams, jellies, and preserves). The end result typically creates bright and winey coffees with a sticky & syrupy texture and strong notes of red fruits.
