Today in our Traditions on a Plate series, we're immersing ourselves in the flavors of Andalucรญa with a delightful bowl of Sopa de R**e, a traditional Monkfish Soup! ๐ฒโจ Dive into the festive spirit with this heartwarming dish that beautifully captures the essence of Spanish holiday celebrations. ๐ช๐ธโค๏ธ
Ingredients:
- 500g monkfish fillets
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 large tomato, grated
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium potato, diced
- 1/2 cup white wine
- 1 liter fish or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Sautรฉ onion and garlic.
2. Add tomato, bell peppers, and potato.
3. Pour in white wine, add broth, and simmer.
4. Add monkfish and cook until done.
5. Season with salt and pepper, garnish with parsley.
