In February 2014 I graduated from the Swiss Sommelier College SFS Zürich (Schweizerische Sommelier Fachschule). As I also have a degree in culinary arts and a Degree in Restaurant Management I am able to combine my know-how in an ecceptional way. I am a certified Sommelière but do not perform the Job in the traditional sense — as in I do not currently work as a restaurant Somm

elière. Instead I focus on the educational component of wine. Part of my job is to lead events on wine and food for consumers, corporate, and industry clients. I teach on general subjects such as “Introduction to Food and Wine Pairing" or on specific focuses like: "Unknwown Wine Countries", "The making of Wine", "Wine Rarities", "Swiss Wine Specialities", “Champagne and Sparkling Wine” and so on, as well as popular topics for corporate clients such as “Business Dinner Wine Etiquette”. In addition to leading classes I consult with restaurants and private clients on wine lists, food and wine pairing, and events. This is especially popular with restaurants who do not have the budget nor the need for a full-time sommelier. I will help the restaurant develop a wine list that suits the need of their restaurant and clientele, and also can train their servers on the wines and service. For "Gregor Kuonen Caveau de Salquenen", I work at different wine tasting shows/ fairs , where I consult customers about the different wines they produce and sell and how to combine them ideally with food. On a freelance basis I also organize Wine tasting events and Wine Excursions to different wine Regions in Switzerland or the boardering Countries like Austria, France, Italy or Germany. An interesting aspekt of my Events is that I try to infuse new ideas like "Wine meets Sports" or "Wine and Art". I also write about wine, both on my blog, and also on a freelance basis for Harrison Spirit.

Im Februar 2014 habe ich mit Erfolg meine Ausbildung als Sommelière an der Schweizerischen Sommelier Fachschule in Zürich absolviert. Da ich auch einen Abschluss im kulinarischen Bereich und in Restaurantmanagement besitze bin ich in der Lage mein Wissen auf eine einzigartige Weise einzusetzen. Ich bin Diplomierte Sommelière aber übe den Beruf nicht im traditionellen Sinne aus- da ich nicht als Restaurant Sommelier tätig bin.Teil meiner Tätigkeit ist es verschiedene Events für Konsumenten und Firmen über das Thema Wein und Speise zu leiten. Ich unterrichte zu allgemeinen Themen wie “Einführung zu Speiseempfehlungen” oder besondere Themen Schwerpunkte wie “Unbekannte Weinländer“, „Die Herstellung von Wein“, „Wein Raritäten“, „Schweizer Wein Spezialitäten“, „Champagner und Schaumwein“, usw. Oder beliebte Themen für Firmen wie “Weinetikett für Geschäftsanlässe“. Zusätzlich berate ich Restaurants oder private Kundschaft zu Weinkarten, Speiseempfehlungen und Events. Dies ist vor allem empfehlenswert bei Restaurants die über kein Budget für einen Vollzeit Sommelier verfügen. Ich unterstütze das Restaurant mit dem Aufbau einer Weinkarte die zu ihrem Angebot und Kundschaft passt. Gleichzeit kann ich auch das Personal mit der nötigen Schulung unterstützen. Für die Walliser Winzerfamilie “Gregor Kuonen Caveau de Salquenen” bin ich an diversen Messen und Ausstellungen tätig .Ich berate die Kundschaft zu den verschiedenen Weinen und dessen Speiseempfehlungen. Auch für die junge und dynamische Firma Wiine.me (Academie du Vin) bin ich als Sommelière an verschiedenen Events und Seminaren im Einsatz. Auf unabhängigen Basis organisiere ich auch private Wein Degustationen und Reisen in verschiedenen Weinregionen der Schweiz wie auch in angrenzende Weinländer wie Frankreich, Deutschland, Italien und Österreich. Ein interessanter Aspekt meiner Events ist das ich probiere neue Ideen zu kreieren wie „Wein und Sport“ oder „Kunst trifft Wein“

A couple of weeks ago we hosted a Whisky tasting Weinkulturen n Chur.
We had the opportunity to taste some fine whiskies from Taiwan and Schottland.

I'm presenting the one that left the geratest impression on my palate and easily is one of my favorite Whiskies!

OCTOMORE

Octomore 10.2/96.9 is one of four releases in the tenth edition of this 'super heavily- peated' line from Bruichladdich. This tenth edition has a 'softer smoke' than previous releases with Octomore 10.2 having its barley peated to just 96.9ppm. The barley varieties used in the whisky are Optic and Oxbridge, 100% of it sourced from Scotland. After distillation in 2010, the single malt matured for the first four years in first-fill American oak whiskey barrels. Then the single malt was recasked into ex-Sauternes wine barrels for another four years. Bottled without chill-filtration or added color at cask strength of 56.9% ABV. Only 42,000 bottles produced. Travel Retail Exclusive.

Aromas of stone fruits like peach and nectarine delight first, with a whiff of smoked bacon and charred oak in the background. A touch salty seaweed as well. It gives off a rich, buttery, oily vibe. The mouthfeel is thick and sticky, with notes of butterscotch and refined sugar. Nice interplay between the sweet notes and the barbecue smoke. Hints of leather and rubber, as well as iodine. The strong and powerful spirit really does work well with (fortified) wine maturation."

"A Cabernet Franc Story" Photo #3

This third photo was taken on April 14th when they were in the middle of inter- vine tilling what is called "décavaillonage".
There was rain during much of the month of April, which forced the teams to carry out disease prevention work in many part of the vineyard on foot, since the soils were too wet to use tractors and other equipment. This rain nevertheless did the vineyard a lot of good, because it replenished the soils water reserves. During this time they also carried out the task of removing any suckers from the vine trunks- which as always was done by hand.

For the month of May they where getting alternating spells hot sun and then rain. These conditions are conductive to outbreaks of fungal diseases in the vines, and this is something they are monitoring very carefully. However, the vines are shooting well and very evenly, and the future bunches praise a very good crop.

Faye is one of our sommeliers in Zurich. She graduated from the Swiss Sommelier College SFS Zürich (Schweizerische
Sommelier Fachschule) AND also has a degree in culinary arts and a Degree in Restaurant Management- the perfect person to ask for food and wine pairing advice basically!

Not only is she leading wine classes but she is also consulting as an expert for many restaurants and private clients whenever it comes to selecting their wine lists or food & wine pairing.

Happy weekend

Region: Valais, Switzerland 🇨🇭
Vinification: selected white grapes 🍇 Petite Arvine, Hermitage and Pinot Blanc. The grapes are vilified seperatley. Each most is fermented in french oak and then aged for aprox. 9 Month in Barrique. After this process the Assamblage takes place and the wine ages for an additional 3 months.
Color: strong golden yellow
Bouquet: Intense and complex, exoric fruit & quitts followed by vanilla and toast
Taste: soft, fresh, well balance structure, long finish
