Been waiting for the right dinner to come along so we can drink this champagne. cooked fish and chips which was great. The wine was clean and crisp with a tight mousse. Plenty of bright green fruit with that beautiful toast taste that I love to have in champagne. In my mind this is a food wine rather than a celebratory quaffer. The flowers are still looking good after a week(now that’s good value). The wine lasted nowhere near that long but then no wine survives the night in our house.

Been waiting for the right dinner to come along to drink this champagne.
cooked fish and chips last night which was really good. Clean and crisp, tight mousse. Plenty of bright green fruit and that beautiful toast taste that I personally prefer in my champagne. In my mind this is a food wine rather than a celebratory quaffer. The flowers are still around from last week(now that’s good value). Continuing on the decanting question. This week I am not decanting as the wine is younger. It has matured nicely In the cellar and I can experiment next time with 20-30mins in decanter. The flowers are there because my pictures are a bit “stark” and because I bought the flowers for Sam. Hoping to garner some Instagram(and not just spousal) brownie points.
In the wine I am hoping to still see some nicely integrated tannins and some big fruit. Bought this En primeur and this is our first bottle.

How long to decant for and why should I bother? Firstly, looking at the bottom right corner of the bottle gives you the answer to why. Separating the wine from the sediment is a must, but the question of how long to decant before drinking is more troublesome. A collection allows you to play with different breathing times as you open the bottles. With this wine I have found 30 minutes is a decent rule of thumb. Would love to know what others think.

Got something special out for this weekend. My wife may be the mother to our two boys but lets face it, she looks after me too! The Chassagne-Montrachet was delightful with our John dory and creamed spinach on Saturday. The Grand-Puy Lacoste was definitely showing its age, as is the label, but complimented the roast lamb we had at Sunday lunch. These two wines show my approach to a wine collection. The white wine was bought en primeur and would now cost significantly more. It's a wine I know I like but could not afford to buy at its current market price. The Grand Puy Lacoste was bought at auction to fill a gap in the cellar. I bought at auction with a friend to allow us to split the case as neither of us needed 12 bottles (or even had the space to accommodate it). It was significantly more expensive buying that way as we are effectively paying someone else to age it for us but this was still cheaper than buying it retail. Also the fun of an auction is never to be underestimated!

Jansz sparkling wine went down a treat this weekend. Drank as an aperitif with salty snacks. Good tight bubbles, the citrus flavours softened by red fruit from Pinot noir. I always love the bread aromas from the ageing process. Great price too.
