Here's some top lamination tips today, folks!

How about adding some extra strength to your dough AND some tasty additions? We are loving adding seeds to our bread at three moment to mix it up a bit and get us in the mood for Spring.

Here's some quick tips on stretching and folding from the powerhouse

How many folds should you do?
As a rule of thumb - 4. If the dough is still stretching significantly after the fourth fold, then go for 5 or 6. If the dough is tight and you can only do a few, leave it to rest a little more and leave more time between sets.

Stretch and folds are better at the beginning of the bulk fermentation when the dough is wet and potentially sticky. Once you're into the bulk, you can change to coil folds as these are more gentle and rely on the weight of the dough to stretch, not how much you can stretch (in a stretch and fold).

If you're at beginning your sourdough journey, stretch and folds may be a better option, particularly if you're working on lower hydration doughs.

Always wet your hands and use a shallow bowl like

Millionaires shortbreads are one of our absolute favs. For nostalgia (they were made for 'tuck day' on a Friday for one of us in the 80's), for simplicity (they're almost impossible to get wrong) and for a completely satisfying sweet treat with all the different textures.

Oooh...The crumble of the shortbread, the fudgy, creamy caramel filling to the crunch of the chocolate on top. πŸ˜›β€οΈπŸ«Ά

Did you know that they originally showed up in the Australian Women's Weekly at the beginning of the 70's? Who knew?
bevington's pimped up version here looks divine. Scroll on to see how she feathers the piping. Simple yet oh so effective.

Thida's tips on this include πŸ‘‡

πŸ‘Œadding a heaped tablespoon of Horlick's powder to the flour mix gives it a lovely malty kick.

πŸ‘Œadding 1 tablespoon of neutral oil to the melted chocolate to help it spread and cut more easily.
