Try Dr Marilyn Glenville’s coconut yoghurt recipe taken from her “Natural Alternatives to Dieting book”.

Directions:

- Roughly chop the coconut cream, then place in a food processor with the hot water and blend until completely smooth.

- Leave to cool (must be no warmer than lukewarm) then add the contents of the probiotic capsule (just pull the capsule apart and use the contents), vanilla and sweetener. The sweetener is not essential, but provides food for the beneficial bacteria to ferment the yogurt.

- Pour mixture into a very clean kilner jar, large jam jar or other glass container and cover with kitchen paper and an elastic band.
Keep in a warm place e.g. on a kitchen counter or airing cupboard.

- After 12 hours, stir the mixture thoroughly with a plastic fork. This will prevent the yogurt splitting. Leave for a further 1 to 2 days before tasting and refrigerating. The yoghurt will continue to thicken over the next few days.
