I studied olive oil for years and this story still gets me every time 🤩 Can we talk about the fact that one of the most important anti-inflammatory discoveries in food science happened because a scientist couldn’t stop thinking about a throat sting? 🤯

In 1999, a scientist tasted fresh olive oil at a conference in Sicily. The sting at the back of his throat reminded him of ibuprofen. That one observation led to the discovery of oleocanthal, a compound found only in real extra virgin olive oil that works on the exact same inflammatory pathway as ibuprofen. Does everything in your cart need to be organic?
Not even close. But knowing where it matters can save you money and genuinely protect your health.

An organic label means the food was grown without synthetic pesticides, herbicides, and fungicides. These aren’t chemicals that pass through you, they accumulate. That’s the part worth understanding.

But organic sea salt? Mineral water? Baking soda? You’re wasting money. These aren’t farmed, so there’s nothing to spray in the first place.
Where it does matter, it really matters.

Always go organic on these:

Strawberries, spinach, apples, grapes, blueberries, these are the most heavily sprayed crops on the conventional market.

Peanuts and peanut butter, one of the most pesticide-dense foods you’ll find, and most people eat it regularly.

Coffee and tea, most is grown in countries with fewer chemical regulations than the US.

Chocolate, the cacao supply chain is one of the least scrutinised for pesticide use.
Extra virgin olive oil, organic certification here has a direct impact on polyphenol content. This one isn’t just about what’s absent, it’s about what’s present.

For me it was olive oil. 🫒

The smell of the harvest. The taste of oil straight from the press. Four generations of my family producing it, my mother still does today.
I didn’t grow up thinking this was special. It was just life.

Then I became a scientist. I studied oleology at the School of Pharmacy, University of Montpellier, France. And suddenly everything I had felt intuitively my whole life had a molecular explanation behind it. 🔬
Then working with Chefs, laboratories, running tasting experiences, meeting producers across the Mediterranean and exploring different production techniques. Decades of knowledge quietly building.
Then I moved to the US. And I watched people I cared about spending money on oils that were doing nothing for them on the health benefit front.
I thought, I know exactly why. And I’m not sharing any of it. That had to change. 💚
So I built LongevistLab. Simple science. Real food.
