Curried parsnip soup on the go here today. I’ve used this recipe from an old cookbook and just substituted the oil for water to fry off the onion, I’ve thrown in a clove of garlic that was lurking in the cupboard as well, 1tsp curry powder and half tsp of cumin powder. Roughly chop 8 parsnips, 2 chicken stock cubes and I’ve added some water just to the top of the ingredients in the pot as the Pro King pressure cooker will make more liquid as it cooks. This will take around 20 mins then I will blitz it with a hand blender and stir in fat free fromage frais as a swop for cream which would be lovely but thinking of our arteries 😂 and waistlines in this house. All the ingredients are ‘free food’ so no weighing we can have as much as we need to fill up.
