• 30 ml fresh lime juice
• 20 ml agave syrup
• 4-5 spearmint leaves

ions against each other under war. The story of two brothers setting up the Santiago de Cuba distillery in 1862, and how the family of fruit bats residing in the distillery, ultimately became the logo for Bacardi rum, representing men coming together under the value of family. The historical 10-year war for independence between Cuba and Spain represents men becoming one body under war. Under this body, guerilla soldiers drank a hot cocktail made of Cuban light rum, honey and lime, later known as “La Canchanchara”, in an effort to find comfort under hardship. A cocktail also considered the grandfather of the mojito and the daquiri – yet another reference to family. This led me to create a modern classic twist to “La Canchanchara”, - a twist that goes under the name “El Anciano”, meaning “predecessor” in Spanish.
