There’s something about Indo-Chinese that never feels polite.
It’s bold. Slightly messy. Full of fire.
Today I washed the gobi properly, salted it so it wouldn’t taste empty,
built a batter that held its shape,
and let it sizzle until it earned its crisp.
High flame…
Soft hands…
Full heart…
