This is pitonca, or infarinata, made by Vittoria. Pitonca is Garfagnana comfort food at its finest—a rich, flavor-loaded polenta dish cooked with local ingredients such as cavolo nero, carrots, potatoes and leeks. It may not look very appealing on camera, but it was delicious!

Nonna Laura makes a Rustic Potato Pie from Puglia!

We are in Zollino, a small town in the Grecia Salentina meeting Laura who prepares a traditional pitta di patate salentina, a rustic potato pie, similar to the Neapolitan gâteau di patate, but richer and more rustic in flavor. In Salento, this dish is made all year round and is often eaten cold, served as an appetiser or shared at family gatherings.

The star of this week’s YouTube video is Rosi from Ormea who prepares a local pasta dish known as lasagne di Ormea.

Despite the name, it has almost nothing in common with the baked lasagna most people know. Instead, it belongs to the tradition of Cucina Bianca (“White Cuisine”), a pastoral cuisine based on the simple ingredients shepherds and mountain families had available: flour, potatoes, dairy products, wild herbs and foraged mushrooms.
