食品安全は「検査」ではなく「意思決定の連鎖」です。
現場で機能する仕組みは、目的に合うデータを、必要な頻度で回せるかで決まります。
HACCP(Hazard Analysis and Critical Control Points)やPRP(Prerequisite Programs)、GMP(Good Manufacturing Practice)、SSOP(Sanitation Standard Operating Procedures)、FSMS(Food Safety Management System)は、書類の整合よりも「変動する現場」を前提に設計します。
人の入替、原料のばらつき、設備の経時変化。ここに強いのは、毎日回る確認と、例外時に深掘りできる確認が分かれていることです。
添付の整理はそのヒントです。
ATPふき取り検査は、清掃状態をその場で素早く確かめ、日常管理のリズムを作る道具。
一方で、LC-MS/MSは高コストでも、トラブル時に科学的裏付けを取り、原因と判断を収束させる道具。
どちらが優れているかではありません。
どの目的に、どの検出原理を、どの手間とコストで当てるか。
検査は「安心」のためではなく、「次の行動」を決めるために置きます。
まず一歩。
いま運用している検査を「日常管理」「工程管理」「表示や回収判断」「トラブル対応」に目的分解できていますか?
Food safety is not “testing.” It is a chain of decisions.
A system that works on the floor depends on data that fits the purpose and can be sustained.

What breaks systems is not a lack of documents, but a mismatch between the question you need to answer and the method you use to answer it.
The attached framework helps reframe verification and confirmation by intent, cost, and effort.
An ATP swab test gives rapid feedback on cleaning status and sets the rhythm for daily management.
At the other end, LC-MS/MS can be resource-intensive, but it provides scientific evidence that brings troubleshooting to closure when stakes are high.
This is not about “better” tests.
It is about choosing the right detection principle, at the right frequency, with the right operational burden, to drive the next action.
One practical step:
Can you map your current checks into “daily management,” “process control,” “labeling/recall decisions,” and “troubleshooting,” and confirm each has a clear owner and trigger?
