I sold books not too long ago, and it was less "booth" and more market stall, meaning I had to catch people as they walked past, not wait for them to wander over.

First read: are they in a hurry? If someone's got that fast, don't-stop-me walk, a book isn't getting between them and wherever they're going.
Second read: are they working the event? Different approach : build rapport now, maybe make the sale later, once they've actually got a free minute.
Third: if they do slow down, what are they looking at first? That tells you where to start the conversation, assuming they're open to one at all.

Most people running a stall just stand there and wait. I've learned that reading someone correctly in the first few seconds matters more than anything I could say after, and the same goes for problems at the booth itself. If something's not working, I don't wait for someone else to notice. I sort it and keep moving.
