Recommended by a true tuna enthusiast, **Iga Chamchi** in Busan exceeded every expectation.
The quality of the tuna reflected exceptional aging and precise thawing techniques. Each slice melted effortlessly on the palate, delivering remarkable purity, texture, and umami. While it sits at a premium price point, it is easily one of the finest tuna experiences I've had in recent years. The intimate private rooms also make it an excellent venue for wine dinners.
🍾 **Palmer & Co Vintage 2015**
An expressive Champagne showing ripe orchard fruit, brioche, toasted hazelnuts, and delicate pastry notes. Extended lees aging adds remarkable depth and creaminess, while vibrant acidity keeps the wine focused. Beautifully open from the very first pour.
🍾 **Henri Giraud Fût de Chêne MV18**
As impressive as ever. Layers of ripe fruit, baked apple, toasted almonds, subtle spice, and smoky oak unfold with remarkable precision. The luxurious texture and complexity evoke a top-tier White Burgundy, while the fine mousse and chalky minerality provide elegance and remarkable length. A Champagne that continues to redefine the category.
🍷 **Henri Boillot Meursault 2022**
Ripe pear, white peach, citrus blossom, and acacia are framed by restrained oak and pronounced limestone minerality. The signature generosity of Meursault is perfectly balanced by vibrant acidity, resulting in a wine of both richness and finesse.
🍷 **PVG Épenottes 1er Cru 2024**
Still youthful and slightly reserved on opening, yet it evolved quickly in the glass. White flowers, lemon zest, pear, and subtle herbal nuances gradually emerged, supported by vibrant acidity and finely textured minerality. Although young, it already reveals the precision and elegance that define the producer's style.
A memorable evening where meticulously prepared tuna met world-class Champagne and Burgundy. Thoughtful pairing, outstanding bottles, and exceptional food—exactly the kind of experience worth sharing.
