BEETROOT PASTA 🫜🍝 & EGGPLANT STRIPS 🍆🌱
Ms. Rabiya Zulfiqar, scientific officer at PHRC and her team have developed an innovative range of healthy and convenient foods, including nutrient-rich Beetroot pasta and ready-to-cook spiced Eggplant strips. The initiative aims to promote healthy and convenient cooking by offering natural, fiber-rich, and iron-packed alternatives to regular refined products, using locally available vegetables. Beetroot pasta provides natural color, antioxidants, and essential nutrients without artificial additives, while the ready-to-cook eggplant strips save preparation time and make healthy eating more accessible for busy households. This development reflects PHRC's commitment to translating nutritional research into practical, affordable, and sustainable food solutions for everyday life.

POST HARVEST MANAGEMENT & VALUE ADDITION OF GUAVA🌱
Dr. Muhammad Abrar, Chief Scientist, and Dr. Sadia Ansar, Scientific Officer, Post-Harvest Research Centre, AARI Faisalabad, attended a meeting on guava value addition held at the DC Office, Sheikhupura.
The meeting brought together the Deputy Commissioner Sheikhupura, Agriculture Extension officials, and progressive farmers to discuss research-driven solutions for guava value addition, post-harvest management, improved returns for growers, and further opportunities for collaboration.

The collaborative effort marks an important step toward transforming laboratory research into practical, field-level solutions—connecting scientific knowledge with farmers’ needs and creating new opportunities for innovation, value addition, commercialization, and sustainable agricultural development.

BEETROOT KHEER MIX 🫜🍚
Ms Sidra Rashid, scientific officer at PHRC developed Beetroot Kheer Mix along with her team. The mix is prepared by dehydrating fresh beetroot at low temperature to retain its natural betalain colour and nutrients, then blending it with rice, milk powder and sugar to create a convenient, shelf-stable, ready-to-cook product. It is rich in dietary nitrates that support blood pressure and blood flow, antioxidants (betalains, vitamin C) for immunity, and iron, folate, fiber, calcium and protein for blood health and digestion, offering a nutritious, naturally coloured alternative to traditional kheer.

VALUE ADDITION OF FRUITS & VEGETABLES 🍎🥭🍅🍊
The scientific Officers Ms. Rabiya Zulfiqar, Dr. Sadia Ansar, and Ms. Sidra Rashid from Post Harvest Research Centre, AARI were invited to deliver comprehensive training sessions on "Value Addition of Agriculture Produce and Cooking Recipes" at RAEDC (Regional Agricultural Economic Development Center), Vehari. The training primarily focused on minimizing post-harvest losses and enhancing farm income through value addition of seasonal fruits and vegetables. Participants were given hands-on demonstrations and detailed technical guidance on the development of various value-added products including ketchup, jams, jellies, pickles, and squashes, along with improved cooking recipes. The session also emphasized food preservation techniques, hygiene, packaging, and marketing aspects to encourage entrepreneurship, particularly among rural women.

Dr. Sadia Ansar, Scientific Officer, Post Harvest Research Centre (PHRC), AARI, Faisalabad was invited as a Guest Speaker for the training on “Comprehensive Risk Management in the Potato Value Chain in Pakistan”, organized by the Agri Support Fund at Okara. It was a highly rewarding experience to engage with enthusiastic participants especially women, on the transformative potential of potato value addition. The session focused on practical approaches to processing, reducing post-harvest losses, and developing market-driven products that can significantly enhance income opportunities.

Witnessing the energy, curiosity, and active participation of attendees was truly inspiring. Empowering women with knowledge and skills not only strengthens individual livelihoods but also fosters entrepreneurship and contributes to sustainable community development.

A successful training session on "Value Addition of Fruits and Vegetables" 🍎🥭🍐was organized at Fazeelat Vocational Training Institute, Samundri, led by esteemed Senior Scientists Ms. Humaira Kausar and Ms. Saima Parveen. The training was specifically designed for female trainees to promote women empowerment, entrepreneurship, and creating sustainable home-based income opportunities. During the session, the experts provided comprehensive and hands-on training on the development of various value-added products emphasizing low-cost preservation techniques, quality maintenance, packaging and marketing skills. The participants took keen interest and actively practiced the product development processes. Chief Scientist Dr. Muhammad Abrar briefed the visitors on our ongoing research and development projects along with Scientific Officers Hafiz Usama Noor, Hammad Naeem and Dr. Sadia Ansar. Our team showcased a variety of high-end, innovative and sustainable food products developed at the center.

Integrating modern testing instruments will significantly improve research accuracy and speed up product development studies.
