Sweet & Sour Pork Ribs
✨ Tangy, glossy, fall-apart tender pork ribs everyone fights over!
Crispy outside, juicy inside, coated in a shiny sweet-and-sour glaze. Beginner-friendly and almost impossible to fail.
Ingredients
Main
* 500g pork ribs
* 3 slices ginger
* 1 tbsp cooking wine
* 20g rock sugar
Sauce
* 3 tbsp black vinegar
* 2 tbsp light soy sauce
* 1 tbsp dark soy sauce
* 2 tbsp ketchup
* 1/2 bowl water
Garnish
* White sesame seeds
* Chopped spring onions

Step-by-Step
1. Blanch the ribs
Place ribs into a pot of cold water. Add ginger slices and cooking wine.
Bring to a boil, skim off foam, then remove and drain well.
2. Pan-fry until lightly golden
Heat a little oil in a pan.
Add ribs and fry until the surface turns lightly golden to lock in the juices.
3. Caramelize the sugar
Add ginger and rock sugar.
Cook over low heat until the sugar melts and coats the ribs with a glossy caramel color.
4. Mix the sauce
In a bowl, combine:
* 3 tbsp black vinegar
* 2 tbsp light soy sauce
* 1 tbsp dark soy sauce
* 2 tbsp ketchup
* 1/2 bowl water
Stir well.
5. Add sauce and boil
Pour the sauce into the pan.
Bring to a boil over high heat.
6. Simmer until tender
Turn to medium-low heat.
Cover and simmer for about 20 minutes until the ribs become tender and flavorful.
7. Reduce the sauce
Remove the lid and turn to high heat.
Stir while reducing the sauce until the ribs are evenly coated in a thick glossy glaze.
8. Serve
Sprinkle with white sesame seeds and chopped spring onions.
Serve hot!

Tips 💡
* Dry the ribs well after blanching so they won’t splatter when frying.
* For softer ribs, simmer a little longer depending on the size.
* Prefer a stronger sweet-and-sour flavor? Add an extra spoon of vinegar or ketchup.
