Specialty coffee consumption just hit another record. More people are getting their coffee outside the home, and when they do, a record 40% are ordering through an app.

When it came time to select our regional preferred roaster for Texas, Oklahoma, New Mexico, Louisiana, and Arkansas, it only made sense to partner with a company that has independence in its name and in its roots. Allow us to introduce you to Independence Coffee Co..

Armed with a 10-pound roaster and a dream, Ragan and Christi Bond started Independence on their Texas homestead in 2003. Ragan roasted 2K pounds of coffee that first year and gave 1.8K of it away, all to dial in the bold, deep-roasted style that became the company’s hallmark. It's National Coffee Day, which counts as a major holiday around here! To celebrate, we’re (re)introducing you to the beans behind the brews.

First up is our national preferred roaster, and they may have the most illustrious origin story in specialty coffee.

A linguist and a philosopher walk into a Coffee Fest trade show in 2002…

…and 12 espresso shots later, they leave with a 12 kg roaster, no place to put it, and no plan for what to do with it.

The good news is that they figured it out relatively quickly, and Metropolis Coffee Company opened the doors to its first café in December 2003.

Two decades later, Metropolis roasts about 1M pounds of coffee a year out of a repurposed riverfront tannery in Chicago, and their obsessively crafted handiwork is enjoyed in hundreds of cafés, hotels, and offices across North America, Europe, and the Middle East.

What's remarkable is how little has changed .

☕ They still hand roast each batch to order.
☕ They still nitrogen flush for ultimate freshness.
☕ They still work hard to create a diverse, supportive environment for employees.
☕ They still put immense love and care into roasting, packaging, and brewing.
☕ They still source quality coffees from producers and importers they know and trust, ensuring sustainability and fair prices for farmers.

They even make North America's first commercially compostable espresso capsules and help coffee companies grow through the Metropolis Workshop. Competitors included.

Their mission, “Great Coffee for Everyone,” actually means everyone.
