I made a breakfast casserole for the week. It turned out really tasty. It is pretty easy to switch up the ingredients, you can use different meats, vegetables, seasonings. I had 3 egg yolks hanging in the fridge, so I added them too.

1 pound breakfast sausage
2 summer squash - diced
1 med onion - diced
1 - 8 oz can sliced mushrooms
2 tomatoes - diced

I like to sauté all my vegetables (except the tomato) until soft and brown my meat before assembling. Place in the bottom of a 9x12 casserole dish.

Mix together:
12 eggs
1 tsp salt
1/4 tsp pepper
1/4 c nutritional yeast
1/3 c cashew milk

Pour egg mixture over the vegetable and meat mixture. Bake at 375° for about 30 minutes until set in the center. Let cool for 5-10 minutes, serve.

I got 2 flats of 🍓 strawberries yesterday from "The Fruit Truck". Here is what I did with those strawberries. First I soaked them in vinegar water (1/4 c vinegar for each 2 c of water) for 10 minutes, then I rinsed them, drained then and cut the tops off. I put the tops in a half gallon jar and covered with white vinegar. Leave at room temperature for 2 days and strain. You can use this for salad dressing or whatever you would like a fruit vinegar flavor in. Next I picked some large perfect strawberries and dipped them in melted bittersweet chocolate. I cleaned all the strawberries that had soft spots and cut them up and added sugar for a fresh strawberry shortcake. The rest I sprinkled with sugar and let sit overnight to get the juices to start coming out. I heated these on the stove to get warm and filled pint jars with strawberries and their juice. I got 12 pints and a pint of strawberry juice! I am so excited to have these on my pantry shelf for quick desserts.

Chocolate Pecan Zucchini Cake

Dry:
1-1/2 cup flour
3/4 cup cocoa
1-1/2 t baking soda
3/8 t baking powder
3/8 t salt

3 cup shredded zucchini
1 cup chopped pecans

Wet:
3/4 cup avocado oil
3/4 cup sugar
3/4 cup brown sugar
3 lg eggs
1-1/2 t espresso powder (opt)
1-1/2 t vanilla extract

Topping:
3/4 cup chocolate chips

Heat oven to 350°. Grease and flour 9x13 cake pan with avocado oil and cocoa powder. Mix dry ingredients together. Add zucchini and pecans and stir to mix. Mix wet ingredients well, add to and mix together with dry ingredients. Pour into cake pan. Sprinkle chocolate chips evenly over top of batter. Bake for 30 - 40 minutes, start checking with a toothpick at 30 minutes. It is done when it comes out clean. Cool.

Dinner -
Schnitzel, cheese buttons (Kase Knepfla) and Cucumber salad. I was going to get an order of cheese buttons at the street fair in Bismarck, but they sold out before I got any, so I made my own.

Dough:
2-1/2 cups flour
1 large egg
1 t baking powder
1/2 t salt
3/4 cup water (more or less as needed)

Filling:
24 oz container cottage cheese - rinsed and drained
1 egg
Salt and pepper to taste
1 med onion - sliced and sautéed (cooled)

Topping:
1 cup cream or more as needed
2 T butter
1 cup bread crumbs

Mix dough together and knead until smooth. Let rest covered while you make the filling.

Beat egg, add cooled sautéed onions, salt, pepper and cottage cheese. Mix well.

Brown bread crumbs in butter.

Divide dough into quarters. Roll dough thin, cut into squares. Put spoon of cottage cheese mixture in the middle. Bring four corners together and pinch each side together to form a square bottomed dumpling.

Drop cheese buttons into simmering, salted water, remove with slotted spoon when they float. Cook the leftover dough in bite sized pieces. Add in with the buttons.

Pour cream into fry pan and sauté cheese buttons until cream is bubbling and reduced. Remove to serving dish, top with bread crumbs. Serve.

Freeze dried boneless, skinless chicken thighs. These had some fat pieces I didn't notice when I dried them, so I just stuck them in a zip top bag and left them on the counter for about 3 weeks. They turned out pretty good. I think if I didn't know they were freeze dried I wouldn't have been able to tell. I do think they would be even better if they were an even thickness, so I will probably pound them out next time I freeze dry boneless, skinless chicken thighs

Freeze dried eggs - using the freeze dried eggs in baking worked wonderfully. I used it in sweet biscuits for strawberry shortcake. You mix the dry powder in with the dry ingredients and the water with the wet ingredients. Scrambled eggs taste the same but are a little tiny bit tougher. The whole eggs didn't work at all. I plan on sqishing the rest of the whole eggs and use the same as the powdered eggs. The yolk just couldn't get hydrated all the way through, so I even tried pressure cooking it but the middle of the yolk was still dry.

I was working with garlic yesterday. I wanted to freeze dry some garlic so I bought a 3 # bag of peeled garlic cloves from Sam's Club. I also started some Fermented honey garlic and slow cooked garlic in avocado oil which also gives you garlic oil!

More Freeze drying adventures... I figured I should test out the freeze dried hamburger so I made taco burgers. I also used freeze dried tomato slices. I think they taste good, but not as good as fresh. They would definitely be delicious in a food shortage situation!

I grated 5 pounds of mozzarella cheese (I buy block cheese and grate it myself, the grated ones have cellulose in them) So, I figured I should make something cheesy for lunch. I made a pasta bake. I cooked a box of pasta according to directions. I sliced up 2 packages of kielbasa and sautéed them with peppers and onions. I mixed the spaghetti sauce and mozzarella in with the pasta. After the onions and peppers were cooked to my desired texture, I mixed it all together and poured it into a casserole dish. I baked it at 350°for 30 minutes. Delish!

2 packages of kielbasa - sliced
1 onion - diced
1 green pepper - sliced
1/4 red pepper - sliced
1/2 yellow pepper - sliced
1 package pasta
8 oz mozzarella

I tried freeze drying vegetables and fruit. Pretty good as a snack. I haven't tried rehydrated yet.
