Out of this world Apple Pie Cupcakes

Ingredients:

For the cupcakes:

1 box of yellow cake mix ( water, oil & eggs)
1 package of PTM Apple Pie

For the apple topping:

1 tablespoon unsalted butter
3 cups peeled and chopped apples
¼ cup sugar
½ teaspoon ground cinnamon
¾ cup water plus 2 tablespoons water divided
2 teaspoons cornstarch

For the frosting:

1 1/2 cups (3 sticks) unsalted butter, at room temperature
4 cups confectioners’ sugar sifted
1 tablespoon vanilla extract
pinch of salt

For the cinnamon-sugar topping:

1 1/2 teaspoons cinnamon
3 tablespoons sugar

Directions:

To make the cupcake mix

1. Preheat oven to 350° F. Line standard tins with paper liners and set aside.

2. Follow the directions on the box of cake and add PTM Apple Pie Mix in the cake mix

3. Divide the batter evenly between the prepared liners, filling each about 2/3 full. Bake until a toothpick inserted in the center comes out clean, about 17-20 minutes.

4. Let cool in the pan about 5 to 10 minutes, then transfer to a wire rack to cool completely.

To make the apple topping:

1. While the cupcakes are baking, prepare the apple topping. Heat the butter in a medium-large skillet. Stir in the apples, sugar and cinnamon. Heat until the fruit begins to release its juices.

2. Add ¾ cup of water to the pan and bring the mixture to a low simmer. Cook until the apples are just fork tender but not mushy.

3. In a small bowl, combine the remaining 2 tablespoons of water with the cornstarch, and whisk lightly until smooth.

4. Add the cornstarch mixture to the apples and cook 1-2 minutes more, until the mixture has thickened. Let cool thoroughly before topping the cupcakes.

To make the frosting:

1. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed for about 5 minutes.

2. Turn the mixer down to low speed and gradually add in the confectioners’ sugar until incorporated.

3. Add in the vanilla and salt and mix until incorporated. Turn the mixer back up to medium-high speed and beat for an additional 4 minutes, or until light and fluffy.

To assemble:

Whisk together the 1 1/2 teaspoons cinnamon and 3 tablespoons sugar in a small bowl. Set aside.
Pipe frosting around the edge of each cupcake, leaving a well for the topping. Sprinkle with cinnamon sugar topping. Divide apple topping evenly among cupcakes. Enjoy!

Mama Miraglia’s Beef Stroganoff

Recipe:
1 ½ lbs sliced round steak
¼ cup flour
¼ cup butter
1 can (4 oz) sliced mushrooms, drained
1 can (10 ½ oz) beef broth
1 cup sour cream
3 cups (6 oz uncooked) pasta
2 tbsp. Party Time Mixes Garlic Galore Dip Mix
Onion powder, regular salt, pepper to taste

Instructions:
Cut meat into thin strips; dust with flour and pepper. In large skillet, brown meat in butter. Add mushrooms, Garlic Galore Dip Mix and seasonings; brown lightly. Stir in beef broth. Cover; cook about 1 hour or until meat is tender, stirring now and then. Gradually blend in sour cream; cook over low heat for 5 minutes. Serve over pasta.

There is so much you can do with all of our new mixes, and this one is no exception! Our new Italiano dip mix is sure to be one of our most versatile yet! It will make a great dip for veggies for sure, imagine dipping some cherry tomatoes in to this one, but I can see lots of great dishes being started with this one, too! Like spaghetti sauce, meatballs, maybe even meatloaf. And what a great olive oil bread dip this one will be! From the kitchens of Italy, where they certainly know how to make the perfect blend of herbs and spices, to your kitchen, for your own creations!
