This browning effect is caused by an enzyme—Polyphenol oxidase or PPO—that is naturally present in the apple itself.

When an apple is sliced, tissue cells located along the cut surface become ruptured or broken.

This cell rupture allows PPO enzymes and other cell constituents to combine and react to create the brown discoloration.

Though the apple becomes less appetizing—it is still safe to eat.

Let’s do our best not to “throw food away” by looking at the Food Recovery
Hierarchy (taken from the California Department of Food and Agriculture, CDFA).

Here are four ways that we can help our world!

1). If we can reduce our intake of food purchase, that is the first thing we can do to
ensure food doesn’t go to waste!

2) As you go down the list- you can see other ways that we can make sure we don’t
waste food which include: feeing the hungry (have you even thought about carrying an
extra sandwich in your bag versus throwing out food at the end of the week?)

3) Feeding Animals- If you don’t have furry paws at home that can help you utilize the
extra food in your pantry, try donating it to a local farm!

4) As we go down the list, another easy thing we can do at home is composting. You can
compost organic waste and use this in your garden!

What does it mean, and what can we do to play our role regarding food sustainability?

ESG is a term that we are hearing more and more due to the current food shortage crisis in the
21 st century. ESG stands for Environmental Social Governance, which translates to the impact
that the products that we manufacture, sell or buy have on our planet, our people and our
corporations.

Did you know that about 8% of green gas emissions are caused by food waste? Reducing and
preventing food waste can help the food shortage crisis that is now threatening the safety and
economic stability of our country and our world.
According to a recent report by Supermarket News, Throughout the COVID-19 pandemic,
sustainability has remained at the forefront of American consumers’ concerns, with 69% of
supermarket shoppers saying they try to reduce their impact on the environment as much as
possible, but what are we doing in or communities to educate our customers and our families to
be responsible in our environment?

In our next post we'll talk more about food recovery and ways to help the planet Earth.

Stay tuned!!

Have you got a great recipe you're ready to share with the world, or that your friends and family tell you that you should go into business selling it?

You should know about the Cottage Food Law.

Cottage food regulations are the rules and legal loopholes so that about anyone with a kitchen in their home can legally cook, bake and or prepare foods and sell it to the general public.

Most states now have these cottage food laws now that don't require a licensed kitchen. In those states, you can sell at a farmers' market or roadside stand jams and jellies as well as baked goods that don't require refrigeration. For this you don't need a licensed kitchen or any inspections.

While Cottage Food laws allow a person to legally bake and prepare certain foods in their home kitchens and sell them on a small scale, (typically at farmers markets and direct to other consumers), very few states allow them to sell to restaurants and grocery stores.

Each state is different, so proper advice is needed from a specialist in each state.

What Is Considered Cottage Food?
Cottage food are the foods, desserts, breads, jams, jellies among others – that you can legally cook, bake and prepare from your kitchen and then sell to the general public. All this are considered NON-Hazardous foods.

Most states determine if a food is non-potentially hazardous by the acidity level found in the food. The higher the acidity, the more stable at a range of temps, that food product is.
