Know exactly what kind of publishing deal you're signing, co-publishing and admin deals are not the same thing and the difference matters. Get songwriting splits agreed on and written down at the session, before memories start to differ. Understand what a publisher is actually responsible for, so you know when something's being handled and when it isn't.

Simple moves. Most people just find out why they matter the hard way.
