People remember how a meal made them feel.

In senior living, that feeling goes far beyond the plate.

It's the resident being greeted by name. The extra moment taken to ask, "How was your morning?" The quiet awareness of who prefers coffee first and conversation second.

These aren't scripted gestures. They're habits built through culture, training, and intentional hospitality.

When dining teams are trained to notice, not just serve, something shifts:

• Residents feel known, not processed.
• Mealtimes become meaningful moments, not just routines.
• Satisfaction grows through connection, not complexity.

The most impactful dining programs aren't defined by what's on the menu alone. They're defined by how residents feel when they sit down at the table.

If you're exploring ways to create more consistent, hospitality-driven dining experiences in your community, we'd love to start the conversation.

Most mealtime struggles in dementia care aren't just about what's on the plate, they're about whether the experience feels familiar and safe.

For someone living with dementia, consistency is everything. The same seat. The same routine. The same face helping them through the meal. When those things stay predictable, residents engage more, stress less, and eat better.

A few simple ways to build that consistency:

- Same seating and table setup at every meal
- Consistent meal timing
- Familiar foods, utensils, and routines
- Same staff approach and cueing style

When residents know what to expect, confidence follows.

We're one week out from our Dining with Dementia workshop — join us June 3rd in Omaha or virtually from anywhere to go deeper on strategies like these.

Registration closes June 2nd.

Please join us in welcoming Steven Cameron to the “Who and How Behind Trestle” as our newest team member.

To truly “Elevate the Experience,” it takes people who understand both hospitality and operations at a deep level — and Steven brings exactly that.

With a background spanning restaurant ownership, luxury hotel dining, culinary education, and senior living operations, Steven brings decades of experience creating hospitality-driven dining experiences rooted in service, leadership, and ex*****on.

Over the past decade, he has led dining programs within senior living communities, helping operators deliver high-quality experiences that balance hospitality, efficiency, and resident satisfaction. His career also includes serving as a Chef Instructor at Le Cordon Bleu College of Culinary Arts, Director of Food & Beverage at a luxury hotel and spa, and Executive Chef & Owner of his own restaurant concept.

At Trestle Hospitality Concepts, Steven will help translate best-in-class hospitality into practical, scalable solutions that support the communities and operators we serve every day.

This addition strengthens how we think, how we build, and how we continue delivering on the promise to “Elevate the Experience.”

“I’m the Executive Director… and marketing, housekeeping, PR, HR… sometimes all in the same day.”

This isn’t rare. And it’s one of the fastest paths to burnout. Not just because of workload, but because it slowly makes strong leaders feel like they’re falling short.

Inside 100% Leader, we focus on something most programs don’t: where are you actually indispensable as a leader, and where are you overextended?

Leadership isn’t doing everything. It’s knowing where you create the most impact and leading from there. When leaders get clear on that, decisions get easier, delegation improves, and the pressure becomes more manageable.

You don’t need to do more. You need to lead differently.

If you’re carrying this kind of weight right now, we invite you to join our next 100% Leader cohort and step into a more focused, sustainable way of leading: https://the100percentleader.com/join

To “Elevate the Experience,” the environment itself has to support it, with infrastructure that works reliably, efficiently, and safely.

As part of the “Who and How Behind Trestle,” Nick brings a critical layer to how we support operators. As our Engineering Consultant, he ensures spaces are built to perform.

With over 20 years of electrical engineering and project management experience, Nick delivers construction-ready, cost-effective system designs that prioritize safety, efficiency, and long-term usability. His work is grounded in a simple idea: buildings should work better for the people who use them every day.

He’s known for solving complex challenges with practical, creative solutions, while collaborating closely with the teams bringing it to life.

And interestingly, he holds a Professional Engineering license in 14 states and is named on three U.S. patents!

At Trestle, he helps ensure the physical environment aligns with the experience we’re helping operators deliver because elevating the experience isn’t just about service, it’s built into the spaces themselves.

Hydration support doesn’t have to be complicated. It just has to be intentional, visible, and consistent.

Dehydration can worsen confusion and increase UTI risk—but hydration doesn’t have to mean only water. Soups, juices, enhanced waters, flavored ice, and other fluid-rich options all count.

A few simple ways to improve support:

Offer choices based on resident preferences

Make drinks easy to see and reach

Support proper positioning during intake

When people are given choice and the right support, they’re more likely to participate comfortably. If you’d like to learn more practical ways to support hydration and mealtime success, join us for an upcoming session:

You can’t “Elevate the Experience” without being able to reach, engage, and connect with the people delivering it every day.

Marckenzy fits firmly in the “how” of the “Who and How Behind Trestle.” Since joining the team in 2023, he has become a key driver of our digital media, social strategy, and advertising efforts helping ensure our message doesn’t just exist, but actually reaches the right people in the right way.

Marckenzy plays a central role in shaping and executing Trestle’s digital presence across our social channels, website, and From Trestle podcast. His work focuses on creating a consistent, intentional digital experience that reflects the work happening behind the scenes.

What makes his impact especially valuable is the balance he brings: a strong understanding of digital strategy and performance, paired with a consistent focus on brand voice, storytelling, and user experience.

As Trestle continues to grow, Marckenzy is a key part of how we show up.

What if senior living has been missing an entire pillar of the resident experience?

In this special role-reversal episode of Tips from Trestle, Kelsey Wilkinson interviews Aaron Fish about the origin of Trestle Hospitality Concepts, the philosophy behind “Elevate the Experience,” and why culture and hospitality have to be treated as strategic priorities, not extras.

From the now-famous bathroom mirror moment to the idea of senior living as a true three-legged stool, this is one of the most personal and thought-provoking conversations the podcast has released.

A must-listen for operators, culinary leaders, and anyone focused on improving the resident experience.
