It's lemon pie in a cookie! 🍋 The idea of putting a pie in a cookie is not new, but is a lot of fun to experiment with. Our sugar free lemon curd brings that lemon pie flavor without all that sugar and with very little effort. You only need to scoop it out of the jar and it's ready to be your new unique cookie topping.
For the "meringue" we're using our marshmallow fluff. Don't worry, that comes right out of the jar too 😅 That means you can make these impressive cookies with just a few easy steps! And, if you want even less steps, we do sell lemon sandwich cookies. Just sayin' 🤣
Lemon Meringue Pie Cookies
½ cup butter, softened
2 eggs
½ cup brown granulated sweetener
1 tbsp vanilla
1 ½ cups almond flour
½ cup lupin flour
1 tsp baking soda
½ tsp salt
4 tbsp keto lemon curd, plus more for topping
4 tbsp sugar free marshmallow fluff, plus more for topping
Preheat oven to 350 and line baking sheets with parchment paper. Mix together butter and sweetener until combined, then add in eggs and vanilla extract. Whisk until smooth. Add in all dry ingredients and stir with a rubber spatula or spoon until combined. Top dough with small dollops of lemon curd and fluff. Use a knife to swirl together. Fold dough so that mix ins are folded into the middle, but not stirred together. Use a cookie scoop and scoop dough balls onto baking sheet. Bake 11-14 minutes. While cookies are still warm use a cup or round cookie cutter to lightly swirl cookie around to form a better circle shaped cookie. While cookies are still warm, top with extra small amount of curd and fluff.
