Sometimes I go seeking out a w**e, or at least a w**e experience.

More often than not though, the w**e, or w**es, seem to find me. I don’t really have another explanation for it.

Like a cool Washington State Chenin on a list that just screams for me to try.

Or, in this case, w**e and spirits reps literally dropping them in my lap … or in the glass.

One of my new projects is consulting on a select w**e and spirits list for a members-only access room opening soon. I can’t share the details or locale just yet … but there were a couple pretty cool finds.

The first was Lasseter Family W**ery in Sonoma County, featuring Bordeaux and Rhône-style w**es.

I don’t know where it’s been the last 25 yrs of my life, but it’s worth seeking out.

Their Inattendu is a Syrah-heavy GSM blend. Beautifully medium-plus bodied, with great fruit, balance and acidity … and a finish that just doesn’t go away.

Then there’s the Zut Alors Sauvignon Blanc. Memorable. More reminiscent of Sancerre than your traditional California offering, and now I can’t wait to see what else they have to offer.

If you’ve been following for any length of time, you know one thing: if I see Chenin Blanc on a w**e list, I’m ordering it.

What I didn’t expect was to find one this good in Old Town Plano on a Monday morning.

Kiona Vineyards out of Washington’s Columbia Valley absolutely delivered. Floral on the nose, ripe pear on the palate, and crisp acidity without being bracing.

Even better alongside the roasted oysters at Urban Seafood Company.

Come for the w**e. Stay for the seafood. Both are worth it.

New from E.H. Taylor: the limited-edition 10-Year Cured Oak, weighing in at a smooth 100 proof.

The “cured” part comes from aging the barrel staves for 13 months, more than twice the traditional time. The result? Everything you expect from Taylor, with caramel and toffee on the nose and palate, followed by a soft touch of oak on the finish.

What you don’t get is the heavy chew**ess you sometimes find in double-oaked bourbon. This one stays smooth, lingering gently across the mid-palate without leaving much burn behind.

Drink it neat. No ice required.

Good luck finding it in the wild, though. You’ll need your favorite bourbon spot to be savvy enough to sn**ch some up.

I don’t usually willingly order Pinot Grigio.

Not because I don’t like it. I just don’t care for the mass-produced versions that seem to litter w**e lists.

Then I tasted the Bottega Vinaia at Joyce’s Seafood & Steaks.

Crisp green apple and citrus. Great acid and balance. A long, lingering finish. Maybe it’s the Trentino terroir. Maybe it’s the attention to detail.

Whatever it is, this is NOT your grocery store Pinot Grigio.

And it is flat freaking delicious.

Even better alongside Joyce’s Oyster Stew, grilled shrimp and fried oysters.

If you haven’t been to Joyce’s, you’re missing out on a Houston institution that’s been doing seafood right since 1997.

Seek out the w**e. And while you’re at it, get yourself to Joyce’s.

When you think of crisp, bright, fruit-forward and acidic Italian w**es … Chardonnay isn’t usually in the top 10 of anyone’s varietals.

So when I got to try Gran Sasso’s offering at Katy W**e & Spirits a couple weeks ago, I was blown away.

This is not your butter and oak bomb Chardonnay. So if you prefer that style, read no further.

But …

If your curiosity is piqued, let me tell you more.

From the Abruzzo region; 100% stainless steel. Green apple and citrus, yet richer than you might imagine. Perfect on a hot summer, non-hurricane afternoon in H-Town.

And absolutely worth seeking out.

Tucked away in The Colony is a hidden gem. And I mean actually hidden.Red Phone Booth is a speakeasy of the first order....

Tucked away in The Colony is a hidden gem. And I mean actually hidden.

Red Phone Booth is a speakeasy of the first order. Ci**rs are plentiful, the spirits list runs deep, the staff makes you feel welcome, and the atmosphere is exactly what you picture when someone says “speakeasy.”

In the glass, Michter’s Rye. Beautiful, spice-driven and damn good neat or over a chunk. Alongside an excellent Plasencia Robusto, it was pretty hard to beat.

If you don’t know Red Phone Booth is there, you’ll be hard pressed to find it.

But trust me. It’s worth looking.

I’d be hard pressed to count on one hand the number of times I’ve seen a Canadian w**e on a Texas w**e list. It just doesn’t happen.

So when Truluck’s in Dallas had one tucked away in the Pinot section, there was no chance we were passing it up.

Le Clos Jordanne Pinot Noir from the Niagara Peninsula is purely Burgundian in style: tart cherry, bright red fruit, beautiful minerality and a long, lingering finish.

Stunning on its own. Pair it with damn near whatever you want.

The important takeaway? If you see this bottle, order it.

Trust me on this one.

At the risk of offending more California producers than I can count, Robert Sinskey might just be my absolute favorite. I was a club member for years. Literally.

They simply don’t make a bad bottle of anything.

Especially their Vin Gris of Pinot Noir, otherwise known as rosé.

Tart strawberry and red raspberry, bracing acidity, and a long, lingering finish, all presented in a beautiful Alsace-inspired bottle. It’s beauty in a glass.

Drink it the day you buy it, or save it for three to five years and see how it develops.

There’s no wrong answer.

Viognier might be one of the best-kept secrets in American w**e. Its flavor profile can run the gamut from semi-sweet to Sahara-like dry.

Today’s glass comes courtesy of Penner-Ash, one of my favorite Oregon producers, and Adam Sabir at Pearl & Vine.

Floral on the nose, with crisp fruit and citrus on the palate. It cut beautifully through the richness of P&V’s Texas Gumbo, and I’m betting it’ll be just as good with the Snapper Tostada.

If you haven’t explored Oregon w**e, you’re flat missing out. And if you see Penner-Ash on the menu and pass it by, I don’t know what to tell you.

This time, it’s High Wire Distilling’s Double Oak offering, weighing in at a smooth and spicy 107 proof.

Vanilla and caramel lead the nose and palate, followed by a spice that hits the tip of your tongue and dances through the middle.

Another beautiful pour from High Wire Distilling, and one worth seeking out behind the bar at Wh***ey Cake.
