Where’s the Beef?

Remember when buying a steak didn’t require checking your credit score first?

Beef prices have climbed to painful levels, and everybody has somebody to blame: ranchers, meatpackers, government, weather, labor, imports or exports.

Unfortunately, everybody is a little right.

There isn’t one beef problem. There’s a whole herd of them.

So, What the Hell Happened?

1. We don’t have enough cattle. Years of drought, expensive feed, land and financing have helped shrink the herd.

2. Cows take time. You can’t fire up another assembly line. Breeding and raising the next generation takes years.

3. Everything costs more. Feed, fuel, land, transportation and financing all end up in the price of beef.

4. Labor is tight. Ranches, feedlots, truckers and processing plants need people willing to do difficult physical work.

5. Processing is under pressure. Plants designed to process lots of cattle don’t suddenly become cheap to operate when fewer cattle show up.

6. Regulations cost money. Environmental, wastewater, runoff, emissions and permitting requirements may be necessary, but compliance isn’t free.

7. Everybody wants American beef. Expanding foreign markets is good for agriculture, but adds demand while supply is already tight.

8. Mexican cattle became complicated. New World screwworm concerns restricted cattle entering from Mexico.

9. Now we’re importing more beef. Washington’s latest attempt to lower prices includes temporarily allowing additional lean beef imports.

Basically, we’re short on domestic beef, trying to convince ranchers to produce more of it, while importing beef to make it cheaper.

We’re paying the Visa with the Mastercard and celebrating because the minimum payment went down.

Where Did the Cows Go?

USDA counted about 28.5 million beef cows on July 1, down 1% from the previous year. The 2026 calf crop was estimated at roughly 32.5 million head, down another 2%.

Drought and poor pasture forced many producers to buy expensive feed or reduce their herds. High interest rates, land costs, fuel and equipment expenses made rebuilding even harder.

And cows stubbornly refuse to respect economic deadlines.

A rancher has to retain a female instead of selling her, breed her, wait roughly nine months for the calf and then raise another generation.

That’s why rebuilding takes years rather than months.

People and Processing

Cattle still need people.

Major cattle-producing states depend on ranch hands, feedlot employees, truck drivers and meat-processing workers. Many agricultural and processing positions pay from the mid-teens into the low-$20s per hour, depending on the job and location.

That isn’t workers getting rich. That’s what difficult physical labor costs.

Processing plants have their own problem. Tyson Foods recently described the situation as one of the most severe cattle shortages in U.S. history. When fewer cattle reach huge plants, the building, refrigeration, sanitation, equipment and employees don’t magically become cheaper.

Consumers can therefore pay record prices while parts of the processing industry still struggle.

Government, Regulations and the Rest of the World

Environmental regulations aren’t solely responsible for expensive beef, despite what your uncle’s page says.

But compliance costs money.

Feedlots and processors face requirements involving manure, wastewater, runoff, emissions and permitting. Many serve legitimate purposes, but equipment, engineering, inspections and paperwork eventually become another production cost.

Meanwhile, American beef has become increasingly valuable overseas.

Opening foreign markets is great for American agriculture. Unfortunately, when you already don’t have enough of something and then find more customers who want it, you still don’t have enough.

Then New World screwworm concerns complicated Mexican cattle imports, further squeezing supply.

Now We’re Importing the Solution

Beginning September 1, the federal government opened an additional 300,000 metric tons of lean beef trimmings to lower tariff rates through November, hoping additional supply will provide relief on ground-beef prices.

Short term, that could help.

Long term, America still needs ranchers to rebuild.

That creates a balancing act: make beef cheaper today without pushing cattle values low enough to discourage producers from investing in tomorrow’s herd.

No tariff change, regulation or executive order can change cattle biology.

The hole took years to dig.

It’ll take years to climb out.

Where’s the Beef?

Apparently somewhere between a drought, a feed bill, a labor shortage, government regulations, a screwworm and a boatload of imported beef.

Eventually, the herd will come back.

Until then, fire up the smoker.

At these prices, the cow’s the only one making it out alive.
