Hope you enjoy this weeks recipe! It doesn't get any simpler than this and the flavor is amazing.

Garlic Pepper Corn chicken

Ingredients:
?? Frozen or fresh Chicken breast
1 bottle of garlic peppercorn vinaigrette salad dressing
2 table spoons of Balsamic vinegar
1 gallon ziplock bag
1 can None stick grill spray
1 meat thermometer

Instructions to marinate:

Take as many chicken breasts, I use frozenas you would like. I suggest extra because the leftover make amazing chicken salad or go great on a spinach salad.

I tenderize the chicken but this is your choice. It's not something you have to do. If you don't have a tenderizer, use a fork to poke several holes in both sides of the chicken. This allows the flavor to get into the chicken.

Put the chicken into the ziplock bag. Pour in the bottle of garlic peppercorn vinaigrette. (If you can't find this at the store, you can buy a simple vinaigrette and added 6 cloves of garlic and 7 to 8 crushed peppercorns.). Add 2 tablespoons of balsamic vinegar. Zip up the bag, leave a corner open and squeeze out all the air then zip closed. Shake until all the chicken is covered with the marinade. Put in the refrigerator for 12 to 24 hours. Note: the longer the chicken is in the marinade the stronger the garlic flavor will be.

Grilling instructions:

Preheat your grill to 350 degrees. Clean very well after the grill is hot. Turn off the burners and spray the grates with the none stick spray. Fire the burners back up and allow the grill to reheat up to 350. Once at temp, turn the grill down to medium heat. Place the chicken on the grill skin side down to start. Close the lid and set a timer for 4 minutes. After the 4 minutes flip to the other side. Close and set the timer for 3 more minutes. After this 3 minutes, use your meat thermometer to check the center of the thickest part of the chicken. Allow it to cook until it reaches 165 degrees. Remove chicken from the grill, put on a plate and cover it with foil. Allow to rest for 5 to 10 minutes before serving.

I'd love hear some honest opinions from those of you who try this. Enjoy :).
