At Proprietors LLC, we're ardent fans of a good classic. Recently, we consulted on the renovation and re-opening of the storied Ace Gilletts lounge inside the Armstrong Hotel in Fort Collins. The updated cocktail haunt pays homage to the establishment's rebellious history, and we designed the revamped cocktail menu with those eccentricities in mind. The new drink selection blends classics with imaginative concoctions, all while highlighting Ace Gilletts' reputation for high-proof beverages. One common bartending technique we recommend to first time home bartenders is utilizing an ample amount of ice within a drink. But, it's a common misconception that including more ice means you'll receive less of your beverage. This aesthetically pleasing tactic simply involves incorporating a greater volume of crushed ice than the volume of the cocktail to stop the ice from moving, which serves the dual purpose of keeping your beverage cold and preventing dilution. We also suggest freezing your glass before pouring in your mixed drink and mounding the top like a snow cone for an added flair. Then, sip away at your leisure. 🍹 (📷: ) ⁠

During both good times and difficult ones, our top priority is the well-being of our team and our community. In light of recent unprecedented developments and mandates, Death & Co is implementing several practices, including relief efforts for our extensive staff. First, we are creating an emergency fund for those directly affected by the location closures. This fund will be distributed based on need and overseen by a committee of seven key former hourly employees. Death & Co’s largest investor will match funds up to $10,000, and we will continue this fundraiser until the crisis subsides and we’re able to re-open our businesses. Also beginning this week, Death & Co’s Instagram page will feature select bartenders and their cocktail recipes, along with an option to virtually tip the staff with all contributions going to the Emergency Staff Relief Fund. Lastly, Death & Company Market will continue to sell merchandise, including wearables, accessories, and home goods, along with gift cards sold at 20% off their dollar value that can be redeemed at any of our locations. It's no secret that the heart of our Death & Co Los Angeles outpost is its expert team, including head bartender Matthew Belanger. A longtime member of the D&C family, Matt was formerly part of our flagship East Village location before moving out to LA last year to help establish and lead the new West Coast outpost. He's constantly working to maintain the energy and ethos of the D&C brand while ideating new drink concepts, and, as he recently told The Daily Beast, attempting to "capture lightning in a bottle again, both here in L.A. and on future projects." With the creative, passionate D& C team, he has developed endless drink masterpieces, but he'll tell you his favorite is the Palm Dreams. Have you met Alex? Alex Day, one of our Proprietors LLC partners and founders, recently answered questions from followers over on the Death & Co page. He recalled his first career-altering visit to Death & Co and how it inspired him to lead a team of highly-talented and welcoming staff members that so effectively cultivate and nurture unforgettable bar experiences. Now, after years in the cocktail scene with experience in everything from barbacking to writing books to leading his own businesses, he says his proudest accomplishment is the staff he's had a hand in assembling at D&C and beyond. From managers, bartenders, servers, cooks and our national leadership group, he states he's just as in awe of these bar-running rockstars as he was the first time he walked through D&C's gilded doors.
