As we "barrel down" our reds — moving wine from tank to aging barrels — it might seem like the wines are settling in for a quiet winter nap. But there’s more happening behind the scenes! 🍷🔍
Most of our wines, aside from a few select whites, undergo Malolactic Conversion ("ML" for short). Despite its name, it’s not a fermentation.🍎 During this process, tart, green apple-like malic acid transforms into the softer, creamier lactic acid, thanks to a hardworking bacterium called Oenococcus oeni. 👷♀🍦
The result? A smoother, fuller mouthfeel and a more balanced, complex wine. While it may look like the wine is resting, there’s quiet magic happening in the barrel. 🧙♂
