LABEL NOIR is our most delicate expression.
Born from our collaboration with Niizawa Brewery, our brewery ranked No. 1 in the world for six consecutive years, this sake was composed for Michelin-starred tables by Regis Camus.
The vision was clear: a sake that honors the chef’s work without competing with it. Enough presence to be felt. Enough restraint to disappear gracefully.
In Japan, the Kuro-ageha, the great black butterfly, does not announce itself. It passes. What it leaves behind is not absence, but resonance. A stillness that carries something of its wings long after it has gone.
This is our philosophy for LABEL NOIR. A sake that opens with spring blossom, brief and luminous. White peaches follow, then apricots, unhurried and unwilling to rush. Silky on the palate. A finish that lingers like a beautiful moment: present, even after it has passed.
Some things leave a mark precisely because they come and go so gently.

日本に生息するクロアゲハは、姿を見せず、ただ通り過ぎる。残るのは不在ではなく、余韻:翅のかすかな記憶です。
春の花のような香りがふと開き、白桃、そしてアプリコットへと、急かされることなく続いていく。口当たりはシルキーで、余韻は美しい記憶のように、過ぎ去ってもなお漂います。
静かに訪れ、そっと去りゆくものこそ、深く心に刻まれる。
