Shrimp and Crab Etouffee

Étouffée (pronounced ay-too-FAY) is one of the classic dishes of Louisiana, but its roots are more specific than many people realize.

Étouffée is widely believed to have originated among the Cajun communities of the Atchafalaya Basin and Breaux Bridge area of Breaux Bridge, a region famous for its crawfish. Unlike many older Louisiana dishes, crawfish étouffée likely emerged in its recognizable form during the late 19th or early 20th century.

Cajun families had abundant access to crawfish from the swamps and bayous. They developed a dish that combined crawfish tails with onions, celery, bell peppers, butter, and a roux-based sauce, served over rice—a practical meal that made use of local ingredients.
