Oven roasted garlic & lemon whipped ricotta —why oven roasted garlic? Because it gives sweeter milder flavor smooth garlic flavor not spicy and bold
Why lemon zest? Gives the bright almost floral notes to the toast so different from the juice, the oils are where the beauty comes out in flavor
Sautéed mushrooms in tallow —giving savory and bringing out that mushroom flavor of umami and earthiness

Let your iron skillet heat up slowly (med heat, not high heat) — making sure its HOTTT when you start
Lots of salt rubbed into your protein & pair that with tallow as your “oil” for searing and cooking
