The last thing I ever thought I’d become was the consultant.
The one person most chefs are too proud to call.

25 years, a couple Food Network appearances, cooking in kitchens throughout the world, and more gray hairs than I’d like to admit, here we are.

At some point you have to stop prioritizing pride over profit. And when you find the right fit, it never feels like an expense. It feels like an investment.

If you’re running a food service operation and something feels like it’s missing, I put together 5 Honest Questions worth sitting with.

One of each, please!

It’s been a good time getting into the cafe/kitchen & working with . A place I’ve been familiar with for decades, and now getting to share some ideas & try out some new menu items.
Weekly specials & other stuff in the mix. Please follow along to see where it all leads!

It all started with food.
But at some point, it became about food & travel.

The world has been my classroom. Food Network, private yachts, cooking for major recording artists, and years of traveling the world chasing culture, food, and everything in between. Stories, lessons, and the road to right here.

Follow along, there’s a lot more where this came from.
Building something in food or hospitality? That’s what is for.

Some of us are wired to build a clock but not watch it tick.

In 2016 I was the sole chef on a 100-foot luxury motor yacht in the Turks and Caicos when someone said something to me I have never forgotten. The final post in the Five Things I Wish I Knew Sooner series is about exactly that.

Somewhere along the way, surviving a service became acceptable.

It shouldn’t be.

The same problems showing up over and over aren’t bad luck. They’re unanswered design questions. Every time you solve one manually instead of building the fix, you’re spending from a reserve that doesn’t come back the way you think it does.

Years back, I did a second run with Drake.

Someone from his squad had some very specific needs. Dancers require high energy without being weighed down. This wonderful human by the name of Toya could not have been more kind and communicative in what she needed. From the moment she asked and every show day until my run was over, she got exactly what she needed.

In this industry it is about making people feel seen, heard, and taken care of. Be the light.
