Harvest at Katherine Lindsay Estate happens in the dark, our team hand-picking Pinot Noir through the night while the fruit is still cool from the evening air. With the vines surrounding our w**ery here, filled bins make only a short drive to the crush pad rather than a long haul across the county. That proximity means less time between picking and processing, which helps preserve the fruit’s freshness and keeps oxidation and heat exposure to a minimum. It’s a rhythm shaped entirely by this site and what it asks of us each season.
