This knife has a long history with me. Bought for me as one of my first knives when I got into cooking almost 8 years ago, it's now been passed down to one of my sous chefs. Over the years of maintenance, it's been worn down into the scallops of the blade, so I took it home to give it a proper edge and some adjustments to the tip.
