Meet Alexandrea, or “Bubz” as we call her around her.

Bubz has been with Council Oak since 2018.

She started as a cook and since then she has worked every inch of a cafe. (EVERY INCH 🧽💪) She helped grow our retail operation to 5 locations and managed our primary location before we sold it in 2023. She’s grown with the company and become an crucial part of our operation

She’s a wealth of knowledge from running our bar operations, managing teams, and serving customers. When she’s not in the building you can find her playing with her 5 grandbabies or on the Golf course.

She’s crafts a pretty delicious drink of month too!

Our customers get to interact with someone who has been in their shoes, and worked the long hours to make a cafe run.

We’re thankful to have her!

The Before & After of 101 W 3rd.

A big part of hospitality is creating a comfortable and, hopefully, beautiful space for guests to enjoy. This takes a lot of thought and effort, but it is so worth it when you see people enjoying the finished product.

We purchased the 101 W. 3rd building in January of 2021 and worked for almost a year and a half to build what you see today. It took imagination to envision what it could become when we walked in for the first time, but we couldn’t be more grateful for how it turned out and that we get to spend our days working here.

The building is roughly 22,000 square feet and was built in three phases over the years. The oldest portion was built in the 1890s and served as a cold storage facility. In 1912, Anderson Furniture Company purchased the old building and added three stories of warehouse space, which we now use for our service shop, parlor, and event space. In the 1950s, the warehouse portion on the west side of the building was added. Today, we use that space for warehousing syrups, sauces, tea, smoothies, cups, lids, and just about anything else a coffee shop would need to operate.

We hope you enjoy the before-and-after shots. Shout out to Taylor Grote for hanging on to the footage from 2021, and to Danny Bligh and Betsy Friessen for creating this clip.

Discover our latest Roaster’s Select: Mexico Natural Light Roast

Grown in the state of Nayarit and sourced from producers committed to organic and Smithsonian Bird Friendly practices, this coffee highlights the vibrant character of Mexico’s natural‑process tradition.

Expect notes of cherry, vanilla, and hazelnut, brought forward by the sun‑drying method. This allows the whole fruit to infuse the seed with rich sweetness. Our team in Sioux City, Iowa, roasts this light profile to showcase both the classic nutty foundation of Mexican coffee and the bright fruit overtones unique to natural processing.

We partner with exceptional producers around the world to bring you coffees that stand out. Enjoy the distinct flavor profile of this limited roast while it’s here.

-Organic + grade-one specialty quality standards
-Roasted with intention for consistency and quality
