Knowing when to harvest grapes for the right balance of sugar and acid is one of the great skills of winemakers. But extreme heat can lead to dehydration or “raisining” of grapes. This can also happen with varietals that ripen at different times to ensure all grapes in a cluster are ready to be harvested.

Veraison! That time of year when color changes, sugars increase while acid decreases and most importantly- clock starts ticking on harvest. Bonus tip: while red on grape leaves may look pretty, it can be a sign of disease in the vine. Disease won’t necessarily affect wine but will affect yields.
