A simple PM on a Victoria Arduino turned into an unexpected discovery. The back fittings on both of the steam valves were broken. That was not a fitting I had in stock, but I was able to make ones for Nuova Simonelli work until the correct parts arrived. Not ideal, but successful. I am thankful this temporary solution prevented any downtime for the cafe.

Regular grinder maintenance is essential not only for the longevity of your equipment but also for the quality of the espresso it produces.

Over time, coffee oils and fine particles accumulate inside the grinder, leading to inconsistent grind size, unpleasant flavors (mold was growing in this one), and increased wear on burrs and internal components. Neglecting this buildup can shorten the lifespan of the machine and compromise the taste of every shot pulled.

By incorporating routine cleaning into your maintenance schedule, you’ll ensure:

Consistent grind quality for optimal extraction

Improved flavor in every espresso

Extended equipment life and fewer costly repairs

Protect your investment, preserve your flavor, and keep your equipment performing at its best.

Performed preventative maintenance on this single group Nuova Simonelli Appia 2. The customer stated that shots pull very quickly, and there is a water leak after pulling a shot. I verified their concern and found that the drain line had become brittle, causing it to fall off. A new drain line was run. The yearly PM was completed, including rebuilding the steam valve, steam wand, replacing the anti-vacuum valve, boiler safety valve, group gasket, and group screen. I pulled, inspected, cleaned, and reinstalled the autofill probe. The machine was far from level, so we leveled it up. After the machine was back on and up to the temperature, we pulled a shot that timed out in almost 3 seconds. We went to work dialing in their grinder and recalibrating the espresso machine shot time. By the end of the service, and I had perfect shots. We covered daily machine cleaning and maintenance before wrapping up.

My "20 minute" job tonight went as follows:

Turn off water ✅️
Disconnect supply lines ✅️
Remove old filter ✅️
Remove old filter mount ✅️
Install new filter mount ✅️
Install filter head ✅️
Reconnect supply lines ❌️ (female supply lines are not the same size as the male end on the head)
Pull appropriate fittings from my kit ❌️ (of course, I don't have the right size)
Lowe's run ✅️
20 minutes finding the correct fittings ✅️
Back to the job site ✅️
Install fittings on the filter head ✅️
Reconnect the supply line to filter ✅️
Reconnect line out of the filter head ✅️
Turn water on flush filter cartridge ✅️
Reconnect water line to the espresso pump ✅️
Turn water back on and check for leaks ✅️

The total time I spent on the 20-minute job ended up being an hour and a half. Many times, things do not go how we want or expect them to go. How you respond when things don't go perfectly, especially in the presence of customers, can make or break you as a small business owner. Laugh and move on. We all want to be perfect on every call, but the reality is anything but. This was just a small setback, but I thought it was worth a share. Patience over perfection!

Why Regularly Cleaning Your Commercial Espresso Machine Is Crucial...

In a busy café or coffee shop, your espresso machine is the heart of your operation. It’s responsible for every espresso shot, latte, and cappuccino you serve — and just like any high-performance piece of equipment, it needs consistent care to perform at its best.

Here’s why regular cleaning should never be overlooked:

1. Consistent Taste & Quality
Old coffee oils, milk residue, and mineral build-up can drastically affect the flavor of your drinks. A clean machine ensures that every shot you pull is rich, fresh, and true to the coffee’s profile. Old oils = bitter shots.

2. Equipment Longevity
Espresso machines are a serious investment. Regular maintenance helps prevent clogs, corrosion, and costly repairs — ultimately extending the life of your equipment.

3. Health & Safety Compliance
A neglected machine can harbor bacteria and mold, especially in steam wands and drip trays. Regular cleaning helps maintain hygiene standards and keeps your café in compliance with health regulations.

4. Efficiency & Performance
A clean machine runs more smoothly and heats more evenly. This means faster service, more consistent shots, and happier baristas.

5. Professionalism & Reputation
Customers notice the details. A well-maintained machine reflects a level of care and professionalism that builds trust and keeps people coming back.

Final Tip:
Daily cleaning tasks (like backflushing and wiping down steam wands) combined with weekly deep cleaning and regular descaling will keep your espresso machine — and your coffee — in top shape.

Your machine takes care of your coffee. Make sure you take care of your machine.
