Bagel Dough

Ingredients

* 4 cups bread flour
* 1 tbsp yeast
* 1 tbsp sugar
* 1 tsp salt
* 1¼ cups warm water

Method

1. Mix all ingredients into a firm dough.
2. Knead thoroughly.
3. Rise until doubled.
4. Shape into rings.
5. Boil briefly.
6. Bake until golden.

Uses

* Bagels
* Breakfast sandwiches

Cookie Dough

Ingredients

* ½ cup butter, softened
* ¾ cup sugar
* 1 egg
* 1 tsp vanilla extract
* 1½ cups all-purpose flour
* ½ tsp baking soda

Method

1. Cream butter and sugar.
2. Add egg and vanilla.
3. Mix in flour and baking soda.
4. Chill if desired.
5. Shape and bake.

Uses

* Chocolate chip cookies
* Sugar cookies
* Drop cookies

Pastry Dough

Ingredients

* 2 cups all-purpose flour
* 1 cup cold butter
* ½ tsp salt
* 4–5 tbsp ice water

Method

1. Mix flour and salt.
2. Cut in cold butter.
3. Add ice water gradually.
4. Form dough gently.
5. Chill before using.

Uses

* Tarts
* Turnovers
* Puff-style pastries

Cinnamon Roll Dough

Ingredients

* 3 cups all-purpose flour
* 1 cup warm milk
* 2 tbsp sugar
* 1 tsp yeast
* 1 tsp salt
* ¼ cup butter
* 1 egg

Method

1. Mix milk, sugar, and yeast.
2. Add remaining ingredients.
3. Knead until soft and smooth.
4. Rise until doubled.
5. Roll, fill, and shape into rolls.

Uses

* Cinnamon rolls
* Sweet rolls
* Sticky buns

Pie Dough

Ingredients

* 2 cups all-purpose flour
* 1 cup cold butter or shortening
* ½ tsp salt
* 4–6 tbsp ice water

Method

1. Mix flour and salt.
2. Cut in butter until crumbly.
3. Add ice water gradually.
4. Form dough without overworking.
5. Chill for 30 minutes before rolling.

Uses

* Fruit pies
* Savory pies
* Quiches

Tips

* Use cold ingredients for pastry and pie dough.
* Knead yeast doughs until smooth and elastic.

Samosa dough;
2 cups all purpose flour
1/2 tsp salt
1 tbsp oil
3/4 cup water
For filling;
250 gr minced meat
50 gr onion
50 gr carrot
50 gr spring onion
50 gr red yellow and green bell pepper
Chilli flakes
Vegetable seasoning
Salt
Flour glue;
1 tbsp flour
2 tbsp water

Salwaa’s Tandoori Butter Prawns

Salwaa's Cape Malay Cooking

Ingredients
1 Tbsp olive oil or any other oil of choice
2 Tbsp butter
1 onion chopped
1 teaspoon garlic & ginger
2 Tablespoons of tomato paste
2 Tablespoons tandoori spice
1 teaspoon chilli flakes optional
a good squeeze of lemon juice
100 ml plain yoghurt
100ml fresh cream
Salt to taste
1kg prawns, deveined
Fresh coriander for garnishing optional

Method:
Heat a large pot with the oil & butter.
Add the onions and braise until golden brown.
Add tandoori spice, chilli flakes if use, as well as the ginger and garlic paste.
Cook for about 10 minutes until the onions are soft and the tandoori spice is well blended. Add tomato paste and the yoghurt.
Taste and add salt to taste
add squeeze of lemon juice
Cook until the sauce are nice and thick.

Add the fresh cream and prawns, give it a quick boil, 3-4 minutes. Stir and switch the plate off.

Garnish with chopped dhanya/coriander. Serve with savoury rice or roti .
