The Impact of Heat Stress on Anthocyanin Levels

🔸Reduced Accumulation: High ambient temperatures (typically over 30°C for many crops) significantly repress the accumulation of anthocyanin pigments.
🔸Transcriptional Repression: Heat stress leads to the downregulation of key genes required in both early (e.g.,) and late (e.g.,) steps of the anthocyanin biosynthesis pathway.
🔸Increased Degradation: High temperatures stimulate the production of Reactive Oxygen Species (ROS) in mitochondria, which activates peroxidase enzymes that directly degrade accumulated anthocyanins in the vacuole, leading to petal or fruit fading.
