No Eggs, Easy Chocolate Cake

Ingredients :

1/2 cup (118ml) of milk
3/4 cup (150g/ 5.3Oz) of sugar
1 teaspoon instant coffee
1 tablespoon vinegar
1/2 cup (118ml) of oil
2 cups (240g/ 16Oz) flour
1/3 cup (35g/ 1.2Oz) of cocoa
1 teaspoon baking powder
Half a teaspoon of baking soda
vanilla
1 cup (237ml) water

Second layer :

1/2 cup (100g/ 3.5Oz) of sugar
1/2 cup (62g/2.2Oz) of flour
3 tablespoons cocoa
1 cup (237ml) water
1 and a half cups (372ml) of milk
1 tablespoon (14.2g/ 0.5Oz) butter
1 tsp vanilla

Instructions :

This soft eggless chocolate cake is a must-try. Finish off the cake with a luscious chocolate ganache and enjoy every bite.

In a large mixing bowl, add half a cup of milk together with three-quarters cups of sugar, a teaspoon of instant coffee and a teaspoon of vinegar. Whisk the ingredients to mix until well combined then add half a cup of oil and whisk it in until incorporated.

Sift in two cups of flour, a teaspoon of baking powder, half a teaspoon of baking soda and a third cup of cocoa powder. After sifting in the dry ingredients, add in one cup of water and start mixing until you have a smooth batter, add in a teaspoon of vanilla essence and mix until smooth with no lumps.

Grease a round baking tray with oil and line with parchment paper then pour in the cake batter and bake in a preheated 170C oven for 30 minutes or until a toothpick inserted in the centre comes out clean. Once baked, let it cool down inside the baking pan. In a medium-sized saucepan, add half a cup of sugar, 3 tbsp cocoa powder, half a cup of flour, one cup of water and one and a half a cup of milk then mix well until smooth.

Put it over medium-sized heat and stir constantly until it boils and thickens. Add one tablespoon of butter and vanilla extract then mix well for about 2 minutes. Remove from the heat and pour it over the cold cake (still in the baking pan). Spread it evenly then cover the top with plastic wrap to prevent it from drying as it cools.

Set it in the fridge for at least 30 minutes. Once chilled, remove from the fridge and garnish the top with grated chocolate. Remove from the pan and serve. Slice and enjoy.

Chicken Samoosas by Monowara Mohamed Bhamjee

Chicken mince..

2 kg chicken mince.. (I take the fillets, washed them with 2 big green peppers, i mince it myself)
2 green peppers
Salt to taste
2 Tblsp Green chilies
1 Tblsp crushed garlic
1 Tblsp red ginger masala
¼ tsp ground cloves
1 tsp peri peri spice
2 tsp ground Dhania
2 tsp ground jeero
6 big onions sliced and diced very thin
1 Tblsp whole jeero
Ghee and oil mixed for frying onions..

Add all spices except the whole jeero to mince and put in a pot ..
Cook till mince is dry.

Before the mince is dry, braise the onions in the ghee/oil with the jeero till transparent and all water burned out
Add onions with ghee to the dry mince and cook it through for a few minutes till all water has evaporated..

Cool down and add enough cut-up green dhania and some shallots..
Note . This recipe is moist and not dry like the normal samoosa mince..

I use this recipe for many savories..

Samoosa Pur.

9 cups cake flour
3½ cups water
2 tsp salt
1 Tblsp lemon juice
Oil and flour for rolling and layers..

Sift flour and salt
Add the lemon juice to the water and make a soft dough.. it must not be sticky but rather a firmer Roti dough..
Make 27 balls and roll each one into a roti
Smear oil on all and sprinkle flour then proceed to stack 6 on top of one another by flipping it face to face on 1 another making sure that both sides of the roti's are oiled and floured except the top one
Roll out into an oblong to fit a swiss Roll pan
Smear oil on the top Roti and bake it in a 180°C oven until the top pur puffs up, remove and throw it out into a tray or on the table upside down, seperate the leaves whilst hot for easier separation and stack it back on top of one another till all is done.
Trim the edges and cut pur in 6 exact strips
If you don't use it at the same time, cover with a cling wrap, then a damp cloth, and keep aside ..
Fill samoosas and seal edges with flour paste.. just mix flour and enough water to make a thick paste..

I got 13½ doz out..
No breakages..
Super thin
Ready to airfry

Batch Baked Pies
These pies are divine.
They freeze well and you always have some for a quick lunch.
It's like your own version of Cornish pasties!
You can also fills the pies with chicken and mushroom filling.

Ingredients
Plain Flour — 1 Kg
•Baking Powder — 2 teaspoons
•Margarine or butter or half butter and half margerine— 500g
•2 Eggs
•Salt — 1/4 tsp
•Cold Water – ½ cup or milk

Meat Pie Filling:
•2 medium-sized soft cooking potatoes
•2 medium-sized carrots
•500g of beef mince
•1 medium-sized onion
•1 tablespoon of Vegetable Oil
•Seasoning – 2 Maggi / Knorr stock cubes and 1 teaspoon of thyme
•1/2 tsp Allspice
•2 tablespoons of plain flour
•Cold water — 1 cup
•Salt — to taste
•1 egg (for glazing the pies)

Preparation :
Filling:

Step 1: Heat the oil and lightly brown the onions

Step 2: Add the minced meat and fry until brown, season the meat with the thyme, allspice, add some curry powder if you like and the bouillon cubes (stock cubes) Then add a 1/2 cup of water and let it cook for 5 min. Stirring well.

Step 3: Add the carrots and potatoes with 1/2 cup of water and salt to your taste. Do not let mixture be too watery

Cover the pot and let it cook till everything is tender (around 15 to 20 min) .

Step 4: Dissolve the flour in some water and add in the filling. This will thicken the filling.

Turn off the heat and let the filling completely cool down.

B-Making the dough:

Step 1: Add the flour in a bowl with the baking powder and a pinch of salt. Then mix well.

Step 2: Add the margarine and mix thoroughly until the mixture looks more like bread crumbs.

Step 3: Gradually add water while mixing until you get smooth dough.

Step 4: Roll out on a flat surface with rolling pin and cut into desired size wth a round cutter

Step 5: Add the filling, fold & brush eggs on the inner side of the pastry to bind

Step 6: Use fork to press the edges together or use a meat pie cutter if you have

Step7: egg wash pies and
set on greased baking tray and put a preheated oven 180C. Bake for 15 to 20 minutes until
the pies are puffed and light brown.

Open freeze the pies - and pack in freezer containers.

The only bread recipe I have been successful with. Quick, easy, and tastes great!!
Makes two loaves.
2cups warm water
1/4cup sugar
1.5 tbsp yeast
1.5 tsp salt
1/4cup vegetable oil
5.5 cups flour (I just used all purpose)
Dissolve sugar in warm water. Add yeast and let proof. Mix oil into yeast mixture once proofed.
Mix flour and salt in separate bowl.
Add dry mixture to wet mixture one cup at a time and stir / mix until soft dough forms.
Knead for 3-5 minutes.
Place in oiled bowl, turn over to coat both sides. Let rise one hour.
Punch down, shape into loaves. Place into greased bread pans. Let rise 30-40 minutes.
Bake at 350 for approx 30 minutes. Brush tops with butter while warm.
