A budget-friendly winner the kids will love these school holidays. They are affordable, crispy and a clever way to use fish for the whole family.
Ingredients:
• 500 g Fresh and Frozen mackerel, boiled and flaked
• 3 medium potatoes, boiled and mashed
• 1 onion, finely chopped
• 1 egg, beaten
• 2 tbsp flour (plus extra for coating)
• 1 tsp paprika or curry powder
• Salt and black pepper to taste
• Cooking oil for shallow frying
Method:
1. In a large bowl, mix the flaked mackerel, mashed potato, onion, egg, flour and seasoning until well combined.
2. Shape the mixture into small patties and dust lightly with flour.
3. Heat oil in a pan over medium heat and shallow-fry the fish cakes for 3–4 minutes per side until golden and crispy.
4. Drain on paper towel and serve hot. Serve with rice and a fresh tomato & onion relish, or in a roll for a quick holiday lunch.
Tip: Make a double batch and freeze the extra patties uncooked – ready to fry on a busy day.
