Shaped by the Galeras volcano and grown in the highlands of Nariño, this lot reflects one of Colombia’s most dynamic coffee regions — where altitude, climate, and innovation come together.
In Chachagüí, coffee grows slowly under crisp mountain air, allowing sugars to develop deeper and flavors to become more layered and expressive. Here, smallholder producers combine generations of knowledge with constant experimentation — refining every step of cultivation and post-harvest processing.
This natural blend, sourced from the veredas of Casabuy and Sánchez, is a result of that precision. Only perfectly ripe cherries are hand-selected and dry fermented in whole fruit, allowing the coffee to gradually lose moisture while intensifying sweetness and complexity.
Varieties: Castillo, Colombia, Caturra
Process: Natural (dry fermented whole cherry)
In the cup: Bright citrus acidity, deep panela sweetness, and soft floral undertones
👉 A profile driven by both origin and process — expressive, structured, and memorable.
