"From Caribe"

This is part of the first challenge with Jim Beam competition Experience Middle East.

45 ml Jim Beam White
120 ml Purple Soda*
4 drops of Chicha bittersweet Oil
Carbonated Chicha Grapes as garnish*

The challenge was about to craft and pour 4 cocktails in 3 minutes using one ingredient in three different ways to enhance the sustainability inside the cocktail preserving balance and the essence of Jim Beam at the same time.

At this opportunity I've used Purple corn in a Chicha morada way as the subject for this challenge.

Silky | Fruity | Spiced | Tridimensional

Purple Soda*

Using the Milk wash as the main technique, I've reached to balance the spiced notes of the chicha morada and upgrading that essence through the clarification milk washing Coconut and Almond milk towards the Carbonation in the end, passing by a controlled process of lactic fermentation which helped to merge all this elements in a unique craft for the pairing with Jim Beam White.

Chicha Grapes*

Taking the essence and the soul of the purple corn, I've soaked the red grapes inside the ISI syphon carbonating and keep it in low temperature (4° C to 2° C) for three days giving the chance to absorb as much as possible the CO2 injected through the syphon, providing the whole flavor of the Chicha Morada in a Tridimensional banger using the tannins of the fresh grape as the main Pilot, connecting in total the whole experience of this cocktail.

Moving forward this cocktail has been inspired by the favourite fruit of my father and in his memory as because of his example I've started to concur in the universe of hospitality.

This is just the beginning of the line "From Caribe" that I will be sharing with all of you through this platform and the upcoming stages where I will be showcasing the real Caribbean essence in the whole UAE territory.

Garnish: Sunkissed Grapefruit wedge with grapefruit black salt.

Method: Rolled

Tolteca kiss cordial :*

Considering all the elements for this cordial. Grapefruit has been considered as the main character since the skin and flesh, going through the juice until the albedo and seeds. Aromatherapy for the soul through some cloves notes, a touch of fruity hints & silky green apple vinegar, a pinch of sea salt to enhance and highlight the flavors and become only ONE.

Since the very beginning of this professional journey my attention has been claimed by the fact of the antique civilizations in the world and their culture, the Tolteca civilization attached themselves to this world as one of the most impressive and smart tribes of the Mayan culture.

Using their wisdom to preserve their heritage and create outstanding buildings into the architectural path.

Teotihuacán is one of the most significant and meaningful developments this tribe has created representing the ascension of those that were able to reach the illumination in their lives, "Pyramid of the sun" is the translation to a true path for the exacerbation of the senses and the joy that this elixir brings is my entry to .
