We are pleased to present the fourth version of our exclusive line as a tribute to the culinary excellence of
e[X]klusiv #4 is a red wine cuvée from vintage 21. Grapes of the Merlot, Rösler and Zweigelt varieties were subjected to a semi-carbonic maceration. In this special winemaking technique, whole grapes are sealed airtight without first being crushed. Natural fermentation begins while the berries are still intact. The intercellular yeast releases carbon dioxide, which inflates the berries from the inside and causes the skins to burst. This method produces a fruity and less tannic wine with lively freshness and aromas. Predestined and exclusive for gourmets and natural wine lovers, which brings us to our cooperation partner:
ESCA is first and foremost a gourmet restaurant in the heart of Pest’s trendy Jewish quarter. Under the direction of Gábor Fehér, who has perfected his craft internationally, dishes are celebrating ingredients from organic and sustainable agriculture. Impulsive yet subtle, Nordic cuisine is combined with a southern European touch, which is always inherent in Hungarian cuisine due to its proximity to the Balkans.
After 8 years of existence, the Restaurants recently merged with the neighbouring naturalwine bar Tábla and the collection behind it. The namesake Zsófi Kékedi has collected not only well-known favourites and hidden gems from Hungary, but also some of the most renowned natural wines from all over Europe in her shop.
The racks of the union are stocked with over 300 wines, which can either be taken away or enjoyed on the spot. The philosophy clearly reflects the pair’s passion for sustainable viticulture with minimal intervention, embodying the essence of the natural wine movement.
