We had a question from Robyn, a Naked Wines Angel this week so I thought I would share!
The question was how long does it take for developing lines to stop being cloudy?
The answer is - once the fermentation stops and the yeast die, solids start to participate to the bottom of the tank quite quickly, (within two weeks).
in white wine, this process can be made a little quicker by chilling in the tank down and taking the clear wine off the top (racking).
However, in Oak Chardonnay that goes through malolactic fermentation (secondary fermentation), ‘lee stirring’ is undertaken to add complexity to the wine (3 to 6 months). This is where the dead yeast is regularly stirred to bring it back into suspension.
Red wines are racked prior to putting into barrel to undergo maturation (30-60 days) from fermentation ceasing.
