There’s something almost unreal about qvevri a method born 8,000 years ago, long before
“science” as we know it... yet still producing some of the finest wines today.
Maybe we didn’t evolve in every way.
Maybe we lost a kind of knowledge — the quiet understanding that comes from living close to the land.
The qvevri stays buried in the earth like a promise: nature already knows what it’s doing.
